About this Cook
I am a retail manager and have 2 wonderful sons. They love to eat and I love to cook for them when I have the time. I've always been told I should open a restaurant because my cooking is so good. I'd love to but I value family time and I know I couldn't commit to the business that would need a lot of time to do so and be successful. I love to cook when I have the time. My favorite thing is to have a group of friends over and to make a meal that knocks thier socks off. All I need is a "YUMMMMM" and I'm happy.
My favorite things to cook
Almost anything. I love fish, chicken and seafood. I love trying something new. I guess one of my favorite things to make would be appetizers.
My cooking triumphs
Making a 5 course meal for a group of 5 couples for New Years Eve. We had 5 different appetizers, 2 different soups, a basic salad, Prime Rib w/ King Crab legs, 2 typs of potaotes, 2 veggies, bread, and 2 different desserts. ALL made by me and by scratch. They loved it and I love making it for them.
My cooking tragedies
Making a Tuna Casserole for my "husband to be". He hated it. I followed the recipe exactly but it turned out horrible. Way to much celery. NOW I take pride in my Tuna casseroel because I know its out of this world!!

Absolute Mexican Cornbread
Fantastic...I cut the butter back to 1/2 C. and only added 1/2 C. sugar. Added the full amount of green chilies. I used a full cup of Pepperjack. This was wonderful and got great reviews tonight from our friends. Served with Chicken Enchilada Verde, Mexican Bean Salad. Fantasitc meal.....

Chocolate Caramel Nut Cheesecake
This is the second time I have made this in 2 weeks. Reason being that someone loved it so much they wanted me to make one for them to take to a holiday party..I received so many compliments!!! I followed the recipe exactly and added carmel and more chopped snickers bars to the top. The cheesecake is not overly sweet which is what makes this works. I also put mine in a water bath. Will I make again ABSOLUTELY!!!!

This was ok...I guess I'm more of a health nut and the bacon really didn't add as much as I thought it would. Just added more fat and calories. I tried making it with pre-cooked bacon and it really was just ok. Sorry.
