Corn Casserole I
Made this for two different pot lucks this weekend with rave reviews. Actually forgot the cheese the second time and it still got good reviews.

Crunchy Oven Fried Tilapia
This was very tasty. We didn't have any basil (I know, crazy) but we did have some Pampered Chef Basil Citrus Rub which was good...I'd actualy add more than what's called for of Basil or added spice. Would be good to cut the fish in strips for fish sticks, too!! Thank you!

Salsa Chicken
Tried this as written tonight. Was very good. I think next time I'll pound the chicken flat and marinate in the seasoning/salsa for a bit before baking - should reduce baking time by a lot. Am excited to try this again with a pineapple or mango salsa!! (also - would use low sodium taco seasoning in the future, too!) Thanks for sharing it!
