Pumpkin Pecan Pie
I took the suggestion below and substituted maple syrup for the corn syrup which worked well. Very easy to make recipe. Baking time also took longer than expected - total of 1 hour. IMO, I think I'd rather have either pumpkin pie or pecan pie rather than the two mixed together. Just my personal preference.

Unbelievable Fish Batter
We thought this was WAAAAY too thick, even when adding 1/4 cup water, as suggested above. For some reason it was not "thinly-coated and crispy", but thick-coated with more batter than fish and somewhat greasy (even with the fat hot enough).

Bread Pudding
For me, this recipe also has too much custard to bread ratio. I added more bread and also some cinnamon. Love the sauce! Brown sugar instead of white for the sauce makes a wonderful dark, rich caramel.
