Pineapple Bread Pudding
This was fantastic - finally a recipe my 4-yo and 1-yo both love! I used whole wheat bread, reduced the sugar to 2/3 cup, and added an extra egg and a little milk, and it came out fantastic!

Baked Ham with Maple Glaze
I agree with both of the other reviews. This is really tasty, and SUPER easy with ingredients you pretty much always have on hand. I would DEFINITELY suggest lining the roasting pan with foil, as burned on sugar is extremely difficult to battle. I just made this tonight and thus haven't won the battle yet - maybe it'd be easier to just buy a new pan? Will definitely use this recipe again.

Caribbean Sweet Potato Salad
This is a delicious, fun, and funky summer salad. You have to double it, because you are going to want extras, and it's almost too much work for just a small amount. The cooking instructions for the potatoes are a bit cumbersome, but clearly designed with keeping dishes low. I just cook them all separately - the corn in the microwave, boil the white potato, and steam the sweet potato (boiled sweet potatoes can get waterlogged). Of course, then I have 2 big pots dirty, but whatever. It's a totally great recipe.
