Fettuccini Carbonara
Very good recipe. I used linguini instead of fettuccini, and following others' suggestions, used half a pound of pasta instead of a full pound. Used 2 shallots, no onion, half in half instead of heavy cream, half a pound of bacon, one egg. I cooked the bacon first, then cooked the shallots and garlic in some of the leftover bacon grease (poured most of the grease out). My ten year old didn't really like it, especially the shallots, but I think my older daughter will like it.

Sweet Potato Casserole I
I used fresh sweet potatoes, not canned. Only used 1/4 cup of white sugar as I figured it would be sweet enough. Also only used 3/4 cup of brown sugar and the dish was still very sweet. I was in a rush, and forgot to add the flour, but the topping turned out fine. The dish looked great coming out of the oven.

Carrot Souffle
I found it took me FOREVER to get the carrots soft enough. Like others mentioned, I used only half a cup of sugar, and I used brown sugar instead of white, also used butter and cinnamon. I liked the dish but my husband and 10-year-old only thought it was "OK" and my 7-year-old didn't care for it. Still, it was an interesting recipe and I enjoyed trying it, other than the carrots taking forever to cook.
