My mother used to make a delicious apple kuchen, and while this is a little different variation, with the coconut, it's really good and a lot easier than my mom's recipe. Served it for a recent ladies gathering with vanilla bean icecream, and it was a hit!

A perfect appetizer....so easy and tastes like heaven. Served a winning low-carb meal to guests tonight. Every course was rated 5-stars in Allrecipes.com. I started with these mushrooms and they devoured them! My only regret is I should have made twice as many. By the way, the other courses included Spinach and strawberry salad with poppy seed dressing, and Herbed pork and apples....all of these are allrecipe 5-star recipes!

I did the unthinkable....made this roast for the first time and served it to guests. But your recipe rating format is so fool-proof that I knew a recipe with so many 5-star ratings had to be a hit. And it was!
