About this Cook
My favorite things to cook
I am always looking for ways to make healthy versions of many of the processed, "white" foods that my children would love to eat. Doesn't have to be 100% whole wheat but does have to be close. Doesn't have to be organic but does have to have no corn syrup, hydrogenated fat, etc. Tricky but very often successful!
My cooking triumphs
Salads, soups, dressings.
My cooking tragedies
Grilled meat. Not so good!

Spicy Grilled Shrimp
Seriously TOO MUCH salt! I cut in half and it was still salty even for my salt-hungry children. Great mix of flavors but definitely cut salt down to 1 TEASPOON. If you don't like spice, cut the cayenne way down, too. Let it marinade for 30 minutes then grill or broil. Delicious (once you cut down the salt)!

Chicken Soup III
Very good, very simple. I never add boullion to my broth but tried it this time. Good but 1/2 as much would have been better. Also, no need to cook 4 hours: the broth is ready easily in 2. Thanks for keeping it real!

Cranberry Sauce
For perfect "jelly": use 1/4 c. Grand Marnier, 3/4 c. OJ, 1 c. white sugar, a pinch of cinnamon, pinch of ginger. Cook for 25-30 mins. mashing berries while they cook. Press through sieve or wire strainer. Firms up nicely and is delicious! Thanks for the start! This is a keeper!
