Spicy Bean Salsa
The black-eyed peas I used had been 'seasoned' and that flavor was a bit distracting. I would omit them anyway b/c I don't think they look very appealing. Cilantro would give this an extra kick.

Chicken Tortilla Soup I
Excellent and easy to make. I used diced tomatoes and followed the recipe pretty closely. I thought it might lack flavor but the cilantro gave it the kick it needed.
