Red Potato Salad
This potato salad has great flavor, doesn’t require any peeling, and is low-fat to boot. The only change I made was to use red onion and some extra dill weed.
I was looking for a potato salad that was NOT my mom’s potato salad, because I know that I can’t compete with it. She is no longer with me to give her recipe, and I am not a good enough cook to attempt to replicate it without her recipe. I would definitely make this again.
