Mexican Zucchini Cheese Soup

Wow!! I'm rating this five stars for the great base recipe, even though I made some changes. SO GOOD! I substituted Rotel for the tomatoes, but still added the can of green chiles. It was spicy but not so bad that you couldn't enjoy it. I also added diced cooked chicken and white rice to make it more filling. This was extremely tasty... my husband had seconds and even requested the leftovers for lunch! This will definitely be on our regular rotation..thanks for the recipe!!

Hasselback Potatoes

These were just ok... great presentation but so-so on the taste factor. It took a lot longer to cook (1 hr 15 min) and they still had a little bite to them. If I make these again, I'll try different seasonings and different potatoes.

Fish Tacos

Um... WOW is all I can say!!! This is easily the top 5 best meal I've ever made. We are not huge fans of fish, so I substituted boneless/skinless chicken breast and it turned out phenomenal! Other than that, followed the recipe to the letter with the exception of a few minor substitutions - cilantro instead of oregano in the sauce, no capers, 1/2 tsp cayenne. It wasn't too spicy so I think I'll add the entire tsp next time. also, used sour cream instead of yogurt. AMAZING!!! Thank you for this recipe!

Burrito Pie

YUM! I am only rating it four stars because quite a few changes were made. We used shredded pork instead of the ground beef, and green enchilada sauce instead of the taco sauce. WOW! This was so tasty, and easy to make ahead and freeze for later use. Thanks for the recipe!!!

Pecan Pie V

This is my new favorite pecan pie recipe! It tasted so much better than the sickly sweet stuff. I made two pies and gave one to my neighbor who said it was the best pecan pie she had ever had. My only disappointment is that it crumbles easily so the presentation isn't fabulous, but in the end, who cares, it still tastes good!

Aunt Teen's Creamy Chocolate Fudge

I can't believe it... it worked! I followed the directions exactly except for one substitution: I used 2 cups of semisweet chocolate chips and 1 cup of Andes mint chocolate pieces. YUM! It tastes like the fudge version of a Thin Mint. One word of caution: when it says "stir constantly," it really does mean stir constantly. I brought mine to a rolling boil, but had to reduce the heat slightly because it was starting to burn. This just added a slightly caramel taste to it, and it worked out in the end, but next time I'll know the reduce the heat immediately. I boiled mine for exactly 5 minutes and it turned out fabulous! Chocolate Mint Cookies I

I hate to give this a low rating, because I had such high hopes for it! My cookies turned out flat as crackers. I adjusted for higher altitude, but I think the problem is the melted butter. If I try this recipe again, I may try just softening the butter and creaming it with the sugar instead of melting it fully, since typically a flat cookie means your butter was TOO soft. Good idea, though!

Tzatziki Sauce

Yeah! Ever since having this sauce at our favorite local Greek restaurant, I have wanted to recreate it at home. I used this actually as a dressing for a cucumber-tomato salad, so the thin consistency was perfect, but I would definitely draing the cukes if you're wanting to use it for a dip. Cashew Chicken Wraps

Yum! I used this recipe as a jumping off point for stuffed pitas. I used the dressing, and added avocado, sprouts and toasted cashews along with leftover cubed chicken. Mixed and stuffed in a pita and you have a great, quick lunch!

Asian Orange Chicken

Yum! Almost exactly like our favorite local Chinese joint. Very tasty, although found the cornstarch to water ratio a little glue-like and clumpy when added to the sauce. At any rate, very yummy, husband loved it - we'll definitely have this again!

Not Your Every Day Smoked Pork Spare Ribs

Delicious! I did not use the mop sauce, but instead just rubbed the meat with the spice rub and let marinade for a few hours. Baked at 350 degrees for 1.5 hours and finished off on the grill for approx. 30 mintes = PERFECT RIBS! This rub is fabulous and had everyone asking for my "secret recipe." Thanks so much - this is a keeper!

Jalapeno Steak

One word = YUM! I seeded the jalapenos so we just got the flavor and a little heat. Perfect! I let marinade overnight and grilled it for dinner the next day. We used leftovers for steak tacos. Fantastic! Thanks for this recipe - it's a keeper!

Pizza Dough I

I'm not sure what I did wrong, but this didn't quite turn out like I expected. I did follow other's suggestions and let it rise for about an hour, and even pre-baked it for 8-10 minutes beforehand. The result is something like a foccacia bread instead of pizza dough - good, but not what I envisioned based on the pictures. I will keep searching for a good pizza dough recipe.

Too Much Chocolate Cake

Amazing! I made this for Easter... it was so dense and moist and easy to make! I didn't make any changes in the recipe and it came out perfect, even at high altitude. I used a powdered sugar glaze for the frosting and it was delicious. Thanks for this recipe!

No Bake Peanut Butter Pie

This was a pretty good recipe. I scaled it down just to make one pie. I used an oreo crust, added a layer of chocolate sauce on the bottom, and added about 1/2 cup of chocolate chips to the peanut butter mixture. Then I stuck it in the freezer for about 2 hours. My husband really likes it... he says it tastes like a giant Reese's peanut butter cup.

Tomato-Cream Sauce for Pasta

This was a great base to start from. I pureed the tomatoes in the blender because I like a less chunky sauce. I also did not add cream, but substituted milk and it turned out just fine. I would probably add a few more spices next time, and omit the sugar.
