I've been married for a few years, and recently graduated with my Masters degree in Organizational Communication. By day I'm a technical writer for a software company, by night I'm a wife extraordinaire and mom to a fat cat and energetic dog!
My favorite things to cook
I love making comfort foods, such as pot roast or slow cooked spicy tortilla soup. I'm still trying to bake at high altitude, though!
My favorite family cooking traditions
Every Christmas Eve, my mom would make this delicious devil's food cake and buttercream icing from scratch. She had a cake pan shaped like a wreath and we would spend the day decorating it while getting ready for Christmas. This year, it's my turn to make the cake!
My cooking triumphs
I can cook just about anything, but baking is another story, because baking is an exact science. I had never baked a pie before and wanted to make an apple pie for our company's 4th of July BBQ. I used Grandma Ople's recipe from this site and it turned out perfect! Everyone raved about the pie and wanted the recipe.
My cooking tragedies
On our first date, I wanted to cook for my husband, so I invited him over and planned to make chicken parmigiana. I was cooking fettuccine noodles when my husband showed up, and the minute I turned my back to answer the door, the noodles boiled over and flames shot out from the stove, setting off the smoke alarm. Thankfully that didn't scare my him away, and three years later we were married!

Fish Tacos
Um... WOW is all I can say!!! This is easily the top 5 best meal I've ever made. We are not huge fans of fish, so I substituted boneless/skinless chicken breast and it turned out phenomenal! Other than that, followed the recipe to the letter with the exception of a few minor substitutions - cilantro instead of oregano in the sauce, no capers, 1/2 tsp cayenne. It wasn't too spicy so I think I'll add the entire tsp next time. also, used sour cream instead of yogurt. AMAZING!!! Thank you for this recipe!

Burrito Pie
YUM! I am only rating it four stars because quite a few changes were made. We used shredded pork instead of the ground beef, and green enchilada sauce instead of the taco sauce. WOW! This was so tasty, and easy to make ahead and freeze for later use. Thanks for the recipe!!!
