Banana Sour Cream Bread
This Banana bread is fantastic. My husband doesn't care for banana bread but went crazy over this recipe! I halved the recipe & made 2 loaves. I used 3.5 large bananas & just sort of squished them in my hands for a few seconds so I didn't completely mash them up. But the chunks in the bread made it even better! I didn't feel like using 1 1/2 eggs so I just used 2 eggs. I used light sour cream & also used half splenda and half white sugar. I left the 2 loaves in at 300 degrees for 1 hour, rotating the loaves in the oven half way. I also lightly covered the loaf pans with foil after 40 minutes. Wonderful, wonderful, Wonderful!

Quinoa and Black Beans
If you have never made Quinoa & are a little hesitant to try it....try this recipe! I have never made Quinoa (or even tasted it) prior to making this recipe. I have been seeing Quinoa in a lot more recipes lately so I decided to give it a go. I added a 1/2t more cumin as recommended. I also diced up a tomato & added it right before serving. It added a nice pop of color. This recipe is delicious cold or warm. It also makes A LOT so you will be lucky enough to have leftovers. I added shredded chicken to it the following day & turned it into a burrito filling for lunch the next day & it was a great hearty addition! I can't wait to make more! This recipe definitely earns the 5 stars.

Amazing Pork Tenderloin in the Slow Cooker
This came out pretty well....not the best tenderloin I've ever made but it was easy to make. If I didn't already have a bottle of red wine open at home, I don't think I would go out & buy one for this recipe. I would probably change out the 1c of water with something else...maybe a beef broth. It was missing depth of flavor. Maybe mix in a little honey with the sauce just before serving. It was a decent, weeknight meal.
