Shredded Beef Enchiladas

Absolutely delicious! I had a frozen chuck roast and looked for a recipe to suit it -- this is one of the best recipes I've gotten from this site in some time. The meat is buttery and perfectly seasoned; the cheese sauce is delectable and could be used in any number of other recipes. This will become a regular treat at our house.

Favorite Peanut Butter Cookies

Wonderful cookies! Delicious right out of the oven with a cold glass of milk. The dough whips up in no time flat. I used real butter, not margarine. I also took them out at 11 minutes - 12 is a little too long.

Basic Chicken Salad

Very simple and very good! I love the toasted almonds. I also like that the ratio of mayo to chicken is not too high -- it's just right! You must include the lemon. I made it just as is and it was fantastic!

Crepes with Spinach, Bacon and Mushroom Filling

So good! I had never made crepes before, so I'm very excited to learn how easy it really is. The filling was scrumptious, but the reason I'm giving it four stars is that the hollandaise-like sauce is way too runny and way too lemony as is. I used 2 Tablespoons of fresh lemon juice. I also tried to get the egg sauce thicker, but it wouldn't thicken. I spooned a little bit over the crepes and baked them for 15 minutes at 350 as suggested by a few other reviewers, and that worked out well. Be warned - this does dirty up quite a few dishes!

Sweet Polish Sausage

Very good! I used about half of the brown sugar, and I think next time I will only use half an onion. I also used precooked sausage and boiled it for about 10 minutes. It went into the oven with the sauce for about 45 minutes.

Gravy Baked Pork Chops

I'm giving these four stars because even though they were good, I think they would have been pretty plain as the recipe is published here. Like other reviewers, I seasoned the pork chops on both sides with a little salt, plenty of fresh ground black pepper, paprika, and garlic powder. I sliced onions and mushrooms and sauteed them first in the butter and added a tablespoon of olive oil. I placed the veges in the 9 x 13 dish and placed the chops on top. I mixed the cream of mushroom soup with about 8 ounces of milk and poured that over the dish. Baked at 350 for about 45 minutes, and served it over mashed potatoes. Yum!

Chocolate Covered Easter Eggs

I made most of them in peanut butter and about a quarter of them with maraschino cherries added to the plain mixture. These were a very big hit! I took them to my mom's for our family Easter dinner, and I shared some with folks at work, too. Everyone liked them!

Easy Breaded Shrimp

This was very easy and the shrimp turn out great! I did add some Old Bay Seasoning to the breadcrumbs, and then I just used my iron skillet with about a quarter inch of canola oil and sauteed the breaded shrimp for a couple of minutes on each side. Perfection!

Creamy Spinach Soup

This is very good, although I used fresh garlic instead of garlic powder, and I sauteed the onions and garlic in a little bit of olive oil before adding the broth and spinach, etc. I also added a little bit of Lipton's Golden Onion soup mix to the broth because I was out of chicken boullion. Yummy!

Personal Portobello Pizza

Delicious! What a great way to use portobellos! Be sure to wipe your mushrooms with a clean cloth - don't run them under water. That may be the reason for the wateriness some people complained about. I didn't have that problem, but also I left them in the oven longer than five minutes the first time around. I basted them with a little bit of olive oil before they went into the oven, too. Yummy!

Banana Cake II

Delicious! Very moist and cake-like, which is exactly what I was looking for. I also had a little bit of melted chocolate from another recipe (melted semi sweet choc chips) and I swirled it into the batter at the last minute. Yum!!! Like others suggested, I used the Cream Cheese Frosting II recipe from this site and it's great!

Spicy Steamed Shrimp

Perfect! I used frozen store brand shrimp, let them thaw under cool water in the sink, and added them to the pot of steaming water. It doesn't take long for them to cook up just right!

Chicken Cheese Chowder

This was good! I used leftover chicken from a roast I made the day before. I also used cheddar cheese, which I grated and added to the roux (flour, butter, milk mixture) before incorporating into the vegetables and broth. The soup is creamy and delicious!

Blue Plate Beef Patties

This is good! Perfect for a cold day's dinner. I made them last night according to the directions and when heating up leftovers today for lunch I did add some Worcestershire sauce -- which made it even better. The mustard, horseradish, and green onions are wonderful additions. Great comfort food!

Ninety Minute Cinnamon Rolls

YUMMY! Either these are really good, or I'm just excited because I rarely eat this kind of thing. My goodness, they're wonderful -- the dough is light and the cinnamon-butter inside is perfect. Plus, they really don't take very long to make!

Lemon-Pepper Salmon II

Glorious! I used a filet of salmon instead of the steaks but it worked out very well. The melted butter and soy sauce form a crust over the top with the seasonings, and paired with the tender salmon it's just mouth-watering.
