I absolutely love to feed people! I like baking and then giving it away. I find cooking therapeutic and I enjoy cooking with my son, Nicholas and my daughter, Olivia.
My favorite things to cook
My favorite things to cook are Indian curries, Southern cooking, casseroles, and I love to bake cakes and cookies. I like to entertain so my family and friends are often guinea pigs for new recipes. Too bad for them when some of my greatest hits are never seen again...
My favorite family cooking traditions
Since my background is Hispanic, I look forward to making Costa Rican tamales for the holidays. Also, I married a rare Florida native (a true southern boy) so we have sausage balls Christmas morning.
My cooking triumphs
I've made some pretty complicated cakes and I make a mean lumpia.
My cooking tragedies
For the longest time I couldn't make a respectable meatloaf (I'm still not too good at it) and perfectly cooked rice was pretty elusive. However, I've practiced making rice for years and now I'm the go-to rice person in my family! Hooray! A happy ending...

Chicken a la King III
Very good! Stuck to the recipe for the most part, but I added half a cup of frozen peas and carrots. So easy and so quick...delicious!

Pineapple Macadamia Nut Cake
This is a very good recipe. The cake is moist and delicious. Next time, I will add another 1/2 cup of macadamias for sure. I was pretty generous with the pineapple - I added a little more than 8 ounces. I baked this cake in a nonstick bundt pan. Thank you for sharing your recipe!

Award Winning Soft Chocolate Chip Cookies
There's a reason why this recipe has 5000+ reviews and mine may not make much of a difference. But these are THE best cookies. Put what you want for nuts and chocolate. I added macadamias, whole walnuts, and semisweet chocolate chunks. Very good recipe and it will become my "go-to" chocolate chip cookie recipe! Thank you!!!
