Makeover Morning Glory Muffins

We loved these! I didn't have applesauce, so I added a little more oil. I also misread the directions and diced the apple instead of shredding. I also added a shredded zuchini. I can't wait to make these again, and a double batch and freeze some too. These made 12 large muffins and 24 mini in just one batch!

Sesame Pasta Chicken Salad

This was really good. By the 3rd day it tasted the best. Next time I might add extra soy and sesame oil because it was a little mild. I think that's why it tasted better the longer it marinated. I did cut the oil to 1/3 which was perfect, but I didn't use an entire box of pasta.

Pizza Casserole

Didn't like it. Made it exactly as stated but added a small can of mushrooms and red bell pepper instead of green. I added an extra layer of cheese in the middle.

Marinated Pork Tenderloin

Wow! This was excellent. I only made one tenderloin, but I made the same portion of marinade stated in the receipe. I did use fresh onion and garlic instead of the dried/powder. I grated a very small onion and minced 4 garlic cloves.

Chicken Noodle Casserole I

This was excellent! I was hesitant to use the canned soup, but after it was baked you couldn't even tell. I also added frozen mixed veggies and only 3 chicken breasts. Will make again.

Fish Tacos

These were good. The sauce makes this receipe because there is no seasoning on the fish it self. I did omit the capers and cut the amount of cayenne in half. Next time I will try to let as much batter drizzle off before I fry them. Some were really thick and BIG. We ended up using one piece (cut in half) per taco.

Slow Cooker Chicken Taco Soup

I would not use beer next time. After cooking on high for 5 hours, I could still taste the beer. Next time I will use chicken broth. Other than that it was great. Topped with sour cream, crushed tortilla chips, cheddar cheese and cilantro.

Flatlander Chili

Very good chili! I made 1/2 the receipe and I didn't have tomato juice so I used V-8. After I cooked the meat, I sauteed the veggies. Added the rest of the ingredients and simmered for 1 hour.

Cilantro Chicken and Rice

We thought this was delicious! I cut the chicken into large chunks and omitted the green chilies. We ate this topped with sour cream, green onions and more cilantro. Served with tortillas and hot sauce....yum!

White Chocolate Fruit Tart

This is awesome! Everyone loved it- they thought I purchased it at a bakery! The crust is delicous and flacky. The filling is creamy and perfect. I didn't end up making the glaze. In addition to the fruits I added raspberries. What a beautiful dessert.

Orzo with Parmesan and Basil

I really enjoyed this dish. Although I didn't have any basil, I just threw it a handful of chopped italian parsley. It was so easy to make. I served it with lamb chops and steamed asparagus.
