Marinated Pork Tenderloin

Wow! This was excellent. I only made one tenderloin, but I made the same portion of marinade stated in the receipe. I did use fresh onion and garlic instead of the dried/powder. I grated a very small onion and minced 4 garlic cloves.

Chicken Noodle Casserole I

This was excellent! I was hesitant to use the canned soup, but after it was baked you couldn't even tell. I also added frozen mixed veggies and only 3 chicken breasts. Will make again.

Fish Tacos

These were good. The sauce makes this receipe because there is no seasoning on the fish it self. I did omit the capers and cut the amount of cayenne in half. Next time I will try to let as much batter drizzle off before I fry them. Some were really thick and BIG. We ended up using one piece (cut in half) per taco.

Slow Cooker Chicken Taco Soup

I would not use beer next time. After cooking on high for 5 hours, I could still taste the beer. Next time I will use chicken broth. Other than that it was great. Topped with sour cream, crushed tortilla chips, cheddar cheese and cilantro.

Flatlander Chili

Very good chili! I made 1/2 the receipe and I didn't have tomato juice so I used V-8. After I cooked the meat, I sauteed the veggies. Added the rest of the ingredients and simmered for 1 hour.

Cilantro Chicken and Rice

We thought this was delicious! I cut the chicken into large chunks and omitted the green chilies. We ate this topped with sour cream, green onions and more cilantro. Served with tortillas and hot sauce....yum!

White Chocolate Fruit Tart

This is awesome! Everyone loved it- they thought I purchased it at a bakery! The crust is delicous and flacky. The filling is creamy and perfect. I didn't end up making the glaze. In addition to the fruits I added raspberries. What a beautiful dessert.

Orzo with Parmesan and Basil

I really enjoyed this dish. Although I didn't have any basil, I just threw it a handful of chopped italian parsley. It was so easy to make. I served it with lamb chops and steamed asparagus.

Fluffy French Toast

These are really good. I added some butter to the skillet, but there wasn't enough batter for all 12 slices. I sprinkled the cinnamon on them before frying them. They are good and have a nice crunch but are missing something, maybe some orange juice or orange zest.

Greek Pasta Salad with Roasted Vegetables and Feta

I can't believe I never rated this receipe! Well, I have been making it for a few years and I always get requested to make this dish and give out the receipe too. I add more veggies than stated including a few zuchini. I roast until the edges are browned. I add extra balsamic vinegar and you can really use any kind of tube pasta you like. Toss all the ingredients and then I add cubed feta cheese. Next time I will try adding some roasted red onion! This receipe is excellent and makes a large portion. Leftovers make for a wonderful lunch.

Rosemary Ranch Chicken Kabobs

These are VERY tender. I think I marinated for 20-25 mins. I used 4 chicken breasts with LOTS of marinade left over. I only used 1 teaspoon of salt, anything more would have been salty. The flavor was good, next time I'll try with homemade ranch.

Award Winning Soft Chocolate Chip Cookies

These cookies were awesome! We made half the receipe but used 1 tablespoon of vanilla,1/4 teasp. of salt, and since we only had 1 cup of chocolate chips- that's what we used. Also, we did half with nuts and the other without nuts. Will make them again!

Beer Butt Chicken

Great tasting chicken although I used the oven, next time I will use the grill. The receipe sounds weird but tastes great! I didn't have a can of beer so I emptied out a soda and opened a bottle of beer and poured it into the can and drank the rest! Cheers!
