Made this for a friends birthday, was told best carrot cake ever had. Took left overs to work.... not a crumb remains. I made a layer cake since it was for a birthday on Friday and it is good for days, it actually improves, keep it wrapped up and in the fridge. This is the perfect recipe as is. If you make layers bake layers 30-40 min. Will make this again soon.
