Baked Acorn Squash
This was a great starting recipe!! It would've gotten 5 stars but I modified it. I only used 2 Tbls of butter and 2Tbls of brown sugar and that was plenty sweet.I did this for only 1 acorn squash. I mixed the ingredients and microwaved them for about 20 secs and put 1/2 of mixture in each 1/2 of squash before baking the last 20 min. My husband mowed on this and asked for 2nds and he's really not a fan of acorn squash. Oh yeah and I also added about a 1/4 cup of chopped pecans... it felt like the 1st day of fall today and this was the perfect side dish... thx Corwynn!!!

White Bean Chicken Chili
I made this last night and it was great. I made a couple of changes such as using ground turkey, 1 more can of beans and mixed 1/2 cup of 1/2 & 1/2 with 2tsp cornstarch to thicken it a bit. It had great flavor and my husband loved it.

Tuscan Soup
This was a great starter recipe, however I did make a few changes. I added 1 bunch of escarole to the spinach and used spicy turkey sausage along with a couple minced cloves of garlic when browning the sausage. I also added about 1/2 tsp red pepper flakes and a can of great northern beans. Instead of canned milk, I used 1/2 and 1/2 cuz that's what I had ( I used about a cup cuz I doubled the recipe) We had this soup with sliced ciabatta bread that was grilled with olive oil rubbed with garlic and then broiled with fresh parmasean cheese. My husband gobbled this up and said it was definately a keeper!!!!! Thanks for the inspiration Dianne :)
