Dill Pickles

These are so easy to make. I didn't see a yield anywhere on the amount of liquid, but it was enough for 6 quarts of pickles. Had some extra, not sure if it would have done 7 or not, but I ran out of small cucumbers. I turned the jars upside down for about 10 minutes right after I canned them, and they sealed perfectly. Just make sure the ring is on toght!

Southwest Chicken

I used left over corn on the cob (3 ears cut off) and roasted it in a little oil with the pre-cooked, cubed chicken. Also used a jar of Chipolte salsa instead of the tomatoes. Served with rice. Great!

Ten Minute Enchilada Sauce

Went to make enchiladas and didn't have any canned sauce, so I jumped on here. Boy am I glad I did. Used 15 oz can of crushed tomatoes and 1-1/2 cups chicken broth. Doubled garlic and onion powder. Added 1 Tbls ground chocolate like I used for espresso. Perfect! No need to buy canned again.

Best Cream Of Broccoli Soup

This was very good, but I did add 1 pound (1/2 box) of Velveta cheese to it towards the end. I took held back about 1/2 of the cooked broccoli and added it to the pureed mixture so it was chunky.

Asian Orange Chicken

I really cheat on this one and buy frozen, breaded chicken bites. Deep fry them, make the orange sauce as directed. And pour the sauce over the chicken and rice/ I also steam veggies in the top of my rice steamer at the same time. Quick meal in less than 1/2 hour and not all the mess of breading the chicken yourself.

Rich and Creamy Tomato Basil Soup

Pretty bland on flavor. Used frozen Roma tomatoes from my garden so shouldn't have lacked tomato flavor. I added a Tbls of chicken base and a little onion powder to give it more flavor. Not the best I have had, but good.

Jam Kolaches

I used to work at a bakery and we made these in apricot and raspberry. I cut them into 2 x 2 sqaures, use a pastry bag filled with jam to place it on the dough instead of a spoon. Then fold them in half so one corner overlaps the opposite corner, and use my finger to pinch the dough together so they don't come apart. I think chilling the dough for only 15-20 minutes works best, as it is too stiff to seal.

BLT Dip

OK, How could anything with a pound of bacon be bad??? I added 2 cups finely shredded cheese, some garlic powder and black pepper. Absolutely a hit! Can't wait for the first football tailgate to share the the dip.

Monster Cookies V

I ran out of oats so used 6 cups oats and 2-1/2 cups flour. Also added 7 oz bag of coconut and used 3 cups M&M's, no other chocolate or nuts. I made mine 5-6 inches in diameter. Rolled into a 2-3 inch ball and did not flatten them. GREAT!

Oriental Cold Noodle Salad

Better than what I buy in our local deli! I have been trying to find a recipe like this for several years and this is the one. I omitted the peanuts and carrots and added a little more brown sugar. Also, I just used whole wheat angel hair pasta.

Really good -- Sargento has a Sun-dried Tomato & Basil blend of Mozerella Cheese out and I used that. Nice addition to a great recipe.

Easy Roasted Pork

You all will think I'm crazy, but I placed 2/3 jar of sauerkraut in the bottom of a foil lined baking dish. Then layed the pork loin on top of the kraut and then poured the sauce over the top. I wrapped everything in the foil and baked for about 1-1/2 hours. Served it with mashed potatoes. The meat and kraut were seasoned perfectly, but I will cut down on the ginger a little next time.

Blueberry Coffee Cake I

Very good! I follwed the recipe exactly, but used Egg Beaters, Splenda and Soy Milk. I think the picture shows it in a springform pan, not a bundt pan. I used a bundt and the topping ends up on the bottom. Oh well! It didn't affect the taste one bit.
