Southwest Chicken
I used left over corn on the cob (3 ears cut off) and roasted it in a little oil with the pre-cooked, cubed chicken. Also used a jar of Chipolte salsa instead of the tomatoes. Served with rice. Great!

Sweet Restaurant Slaw

Best Peanut Sauce
Adding rice vinegar and frech ginger were key! I used it as a marinade for grilled chicken.
