Scalloped Potatoes and Onions
First, I cheated and used two bags of sliced potatoes from the refrigerated section of the grocery store. Amounts worked perfectly. Second, I "veganized" it by using vegetable broth, Vegenaise, and Earth Ballance buttery sticks. The dish turned out perfectly!

Orzo and Wild Rice Salad
I used a total of 1/4 vinegar and added sliced black olives. To make it vegan, I used agave nectar instead of honey. Dressing also works with 1 lb. of pasta alone.

Strawberry Pie II
This recipe is great in a graham cracker crust. (I used a whole wheat one with non-hydrogenated fats.) The key to having it set up is to FOLLOW THE DIRECTIONS! Time and patience here. If you simmer it for the 10 minutes, it will set up.
