1-Pot, 3-Bean Chicken Stew
I used 1 tbsp of oregano AND 1 tbsp of basil. More onion and added 1 cup of Swiss Chard. Regular chicken. Omitted the wine since my daughter does not like sauces made with wine. Very tasty.

Vikki's Red Bean Sausage
Incredibly good! I added the sausage after everything is already bubbling and then cook for 10 minutes more. We eat spicy, but I still halved the cayenne and black pepper.

California Chicken Spaghetti
Very easy and very good. I replaced two of the chicken breast halves by a pound of steamed asperagus.
