Crunchy Rice Casserole
A little bland - I did put fried onions on top. It tasted like it was missing "something". Maybe next time a little more ketchup or something of the like. I put leftovers into scrambled eggs the next day - that was DELISH!

Absolutely Fabulous Portobello Mushroom Tortellini
Pretty good! I made it for 6 servings - I used a 15oz. jar of alfredo. I served it with Organic Rustic bread and Irish butter. YUM. Definitely not good for the waistline, but fast and so tasty!

Halibut-Mango Ceviche
Great recipe. It makes a lot - I brought some to my neighbor and STILL had some left over. I followed the directions perfectly and it was great!
