Southwestern Egg Rolls
I made these vegetarian by omitting the chicken and adding extra red peppers, beans and yellow peppers. I used tortillas and fried as stated though the next time I will try baking them after brushing with olive oil. Cheesy and delicious. I made a cilantro dipping sauce to dip the rolls into.

Authentic Enchiladas Verdes
My rating is for the sauce--its amazing. My store doesn't always carry tomatillos, so when I buy them I freeze them in their husks (they freeze very well). I also cooked the chicken as directed, wonderful and moist. I gave the left over broth that it cooked in to my dogs--poured right over their dinner. They went wild over it :-)

Pasta Primavera with Italian Turkey Sausage
I loved this, even after being overly concerned that the tomatoes would get cooked down too much. The sauce was perfect and light. The only thing I would change next time is either use sweet italian chicken sausage or leave out the crushed red pepper. I found the heat a tad overpowering from the hot sausage and the red pepper together.
