Homesteader Cornbread
While I don't doubt this is from her mother in law in Canada, it is just the recipe from the back of the Purity cornmeal bag (the most common brand of cornmeal here in Canada). The only thing different is this recipe uses half the baking powder stated on the bag, and it says to leave it soak for 10 minutes.
I use this recipe (with the extra baking powder) all the time, and usually buy my cornmeal bulk, so I refer to this site to get the recipe. I always half the recipe to make 12 cornmeal muffins or 2 mini loaves, since it doesn't really keep.
Also, you can substitute almond or soy milk just fine in this recipe, and add a lot less sugar or use honey if you want, or whole wheat flour works fine too.
