Easy Scalloped Potatoes

Mary Anne's Carrot Cake

I found that this cake came out too soft and oily for my taste. In hindsight I should have added a bit more flour and reduced the amount of oil even more than I did. I will say that the flavors in the cake were nice. I will make it again but will tweak it next time.

Summer Soup of Butternut and Corn

I made this soup without the corn and it still came out well. I did substitute cinnamon for nutmeg. also added one granny smith apple and pureed that along with the squash. Yum.

Big Soft Ginger Cookies

These cookies came out okay which says more about me and less about the recipe itself. For starters I used less butter than the recipe called for (only had 1/2 cup) so the cookies had a "floury" taste. Since I love ginger (I used freshly grated ginger instead of powdered ginger) I will try these again.

Spicy Sweet Potato Soup

This soup came out very good. I loved the flavors and the smooth texture. It's hearty so can be used as a side dish as well as a main meal.I used vanilla yogurt on top for a great cool taste. Will surely make again.

Red Lentil Curry

This recipe turned out very good and spicy. I was not sure if I had rinsed the lentils well before cooking so I just rinsed them with cold water afterwards. They didn't come out mushy at all. I didn't use tumeric but it came out great. I also followed another review's advice and substituted lemon juice for the sugar. Great with some brown rice and raita!

Golden Lemon Pound Cake

I altered this recipe a little. I used brown sugar and wheat flour in addition to the white stuff. Although I used more lemon than the recipe called for it still wasn't "lemony" enough for me. I was also able to taste too much of the flour. This was probably due to my baking rather than the recipe. Overall, it's a nice cake.

Sunburst Lemon Bars

These bars were just okay.The crust came out too hard and the filling was too soft. Also, the edges were tough and chewy so I had to cut them off. These bars aren't worth the trouble, I will not be making them again!

Grandmother's Buttermilk Cornbread

This cornbread came out very well. I followed the instructions to the tee. It was a bit too sweet for my taste though. Next time I'll cut the amount of sugar. Also I used whole corn kernels and jack cheese. Yum!

Streusel Apple Pie

This pie was excellent. I added chopped cranberries to the streusal topping for an added effect. I also followed others and added lemon juice and flour to the filling.

Oatmeal Raisin Cookies I

These cookies were so easy to make and they came out great. Follow the baking time if you want cookies on the softer side. I left mine in longer and they were pretty crispy. Still good though!

Grilled Salmon with Ginger-Orange Glaze

Excellent. I got rave reviews for this one. The longer you let the fish marinate, the better it comes out. Oh, I baked the fish instead of grilling at it came out great nevertheless.

Fresh Coconut Cake

I only made the frosting from this recipe and it did not come out well. Although I followed the instructions exactly I found that it came out syrupy sweet and too thin.
