Chicken Lo Mein

Reviewed: Oct. 20, 2011
If you enjoy Lo Mein, you will enjoy this. Next time I make it, however, I will use a little less ginger. It was a bit overpowering. The leftovers tasted even better cold the next day.

Crunchy Rice Casserole

Reviewed: Mar. 13, 2011
I wasn't too sure about this, it didn't look very appetizing when I was getting ready to put it in the oven. The end result was delicious. My husband had the leftovers gone before the next day. I didn't have any cornflakes so topped it with french fried onions instead. I will be making this again and again.

Taco Seasoning I

Reviewed: Oct. 31, 2010
I must eat only gluten-free foods and all the pre-packaged taco seasoning mixes I could all contained wheat flour. I was thrilled to find this recipe and even more thrilled the first time I made tacos with it. Thank you so much for sharing!

Chicken Wing Dip

Reviewed: Dec. 26, 2009
I made this to bring to a party and it was a hit, except that I erroneously bought extra-hot pepper sauce instead of regular. Needless to say it was quite hot. Some people could not eat it. Next time I am going to try using mild chicken wing sauce instead of pepper sauce so that more people can enjoy it.

Vanilla and Chocolate Delight

Reviewed: Dec. 26, 2009
This is very similar to a dish I have been making for years, except that it is called Chocolate Lush and calls for walnuts instead of pecans. It can also be made with lemon pudding instead and topped with nuts. I recently made it with peanuts in the crust instead of pecans and topped it with chopped peanut butter cups. Yummy!

Caramel-Filled Chocolate Cookies

Reviewed: Dec. 26, 2009
These were terrific. I followed the advice of others and put the Rolos in the freezer for awhile before using. The caramel didn't ooze out of a single cookie while baking. These have officially become part of my annual Christmas cookie repertoire.

Ricotta Cookies III

Reviewed: Dec. 26, 2009
These cookies were easy to make, however we found them to be quite bland and we didn't care for the texture. They did taste better after sitting for a day or 2. I would not make these again.

Cranberry Orange Cookies

Reviewed: Dec. 21, 2009
Tried these on a whim and they have become a new favorite. This will easily be the best cookie on my cookie tray this year. I did make a couple alterations after reading other reviews. I substitued 1/2 cup of butter flavored Crisco for 1/2 the butter and I added a tsp of orange extract. I also threw in about a cup of chocolate chips. I would recommend that you don't skip the icing, as others have suggested. I tried 1/2 a cookie without the icing and the other half with. Definitely better with the icing. Enjoy!

Chicken Breasts in Caper Cream Sauce

Reviewed: Apr. 11, 2009
Very tasty and easy to prepare. I've made this twice and it was good as written but the next time I decided to doctor it a bit. I made a roux after removing the chicken from the pan then I added 1/4 cup of white wine to deglaze the pan before adding the cream. This thickened the sauce nicely. I also added about a tsp of dried dill for more flavor.

German Chocolate Upside Down Cake

This tasted pretty good but was not very pretty to look at. Typically chocolate cake goes quickly in my house. I ended up throwing the last few slices away.

Sandy's Chocolate Cake

Reviewed: Feb. 28, 2009
First, thanks so much to Sandy for sharing this receipe! It is the best chocolate cake I have ever baked and everyone I served it to said it was the best they had ever eaten. I don't know how anyone could give it less than 5 stars. I would give it more if I could. The cake is moist and chocolately and the frosting has just the right amount of sweetness. The only mistake I made was using only 2 9" pans because I didn't have 3. I should have scaled back the receipe when I did this because it caused a bit of spillover in the oven. I used Pam spray for baking and the cake didn't stick at all. Try it, you'll like it!

Amish Macaroni Salad

Reviewed: Feb. 15, 2009
I have been making the same macaroni salad recipe for years but decided to give this one a try. My son proclaimed it to be the best macaroni salad I ever made. I did cut back on the sugar to 1/4 cup but I also used sweet relish since I didn't have any dill. I think it would be good with the dill relish as well. I used mayo instead of salad dressing since that's all I had on hand and I only used about 1 1/2 cups. That was plenty.

Dilly Chicken Sandwiches

My family and I thought this was pretty good but not "too die for". I might make this again and serve on grilled rosemary foccacia instead of french bread. The chicken could also use a sprinkle of salt and pepper while cook.

Fairy Godmother Rice

Reviewed: Feb. 8, 2009
This was good and better than the packaged flavored rices but really nothing to rave about. We found it too salty, even though I used low sodium soy sauce. I think maybe 2 packages of soup mix is just too much. It was also quite greasy. I might try this again using only 1 package of soup and 1/4 cup of butter.

Salisbury Steak

Reviewed: Feb. 8, 2009
This receipe is easy to make and has great flavor. My son proclaimed that although he is not a fan of salisbury steak, this was excellent. I served with mashed potatos and the sauce made an excellent gravy. I didn't change a thing. Thanks for sharing.

Panzanella Salad

Reviewed: Jan. 13, 2009
We love this salad! The only change I made was to substitute black olives instead of green, only because of personal preference. It makes a lot of salad and I thought the leftovers would be too soggy but it actually tasted even better the next day. Looking forward to making this again.

Zuppa Toscana

Reviewed: Jan. 13, 2009
The first time I made this it was good but not great. The second time I used Italian sausage, browned not baked, and added a couple cloves of minced garlic. I also substituted baby spinach for the kale. We like it much better prepared this way.

Seven Layer Taco Dip

Reviewed: Jan. 13, 2009
Excellent. I skipped the peppers because I don't like them and I left out the chopped tomato and lettuce because I was taking it to work and was afraid that it would get too soggy. Everyone raved about it and several people asked me for the recipe.
