Chicken Breasts in Caper Cream Sauce

Reviewed: Apr. 11, 2009
Very tasty and easy to prepare. I've made this twice and it was good as written but the next time I decided to doctor it a bit. I made a roux after removing the chicken from the pan then I added 1/4 cup of white wine to deglaze the pan before adding the cream. This thickened the sauce nicely. I also added about a tsp of dried dill for more flavor.

Very good. Next time I will try using orzo instead of rice.

German Chocolate Upside Down Cake

This tasted pretty good but was not very pretty to look at. Typically chocolate cake goes quickly in my house. I ended up throwing the last few slices away.

Sandy's Chocolate Cake

Reviewed: Feb. 28, 2009
First, thanks so much to Sandy for sharing this receipe! It is the best chocolate cake I have ever baked and everyone I served it to said it was the best they had ever eaten. I don't know how anyone could give it less than 5 stars. I would give it more if I could. The cake is moist and chocolately and the frosting has just the right amount of sweetness. The only mistake I made was using only 2 9" pans because I didn't have 3. I should have scaled back the receipe when I did this because it caused a bit of spillover in the oven. I used Pam spray for baking and the cake didn't stick at all. Try it, you'll like it!

Amish Macaroni Salad

Reviewed: Feb. 15, 2009
I have been making the same macaroni salad recipe for years but decided to give this one a try. My son proclaimed it to be the best macaroni salad I ever made. I did cut back on the sugar to 1/4 cup but I also used sweet relish since I didn't have any dill. I think it would be good with the dill relish as well. I used mayo instead of salad dressing since that's all I had on hand and I only used about 1 1/2 cups. That was plenty.

Dilly Chicken Sandwiches

My family and I thought this was pretty good but not "too die for". I might make this again and serve on grilled rosemary foccacia instead of french bread. The chicken could also use a sprinkle of salt and pepper while cook.

Fairy Godmother Rice

Reviewed: Feb. 8, 2009
This was good and better than the packaged flavored rices but really nothing to rave about. We found it too salty, even though I used low sodium soy sauce. I think maybe 2 packages of soup mix is just too much. It was also quite greasy. I might try this again using only 1 package of soup and 1/4 cup of butter.

Salisbury Steak

Reviewed: Feb. 8, 2009
This receipe is easy to make and has great flavor. My son proclaimed that although he is not a fan of salisbury steak, this was excellent. I served with mashed potatos and the sauce made an excellent gravy. I didn't change a thing. Thanks for sharing.

Panzanella Salad

Reviewed: Jan. 13, 2009
We love this salad! The only change I made was to substitute black olives instead of green, only because of personal preference. It makes a lot of salad and I thought the leftovers would be too soggy but it actually tasted even better the next day. Looking forward to making this again.

Zuppa Toscana

Reviewed: Jan. 13, 2009
The first time I made this it was good but not great. The second time I used Italian sausage, browned not baked, and added a couple cloves of minced garlic. I also substituted baby spinach for the kale. We like it much better prepared this way.

Seven Layer Taco Dip

Reviewed: Jan. 13, 2009
Excellent. I skipped the peppers because I don't like them and I left out the chopped tomato and lettuce because I was taking it to work and was afraid that it would get too soggy. Everyone raved about it and several people asked me for the recipe.

Chocolate Thumbprints II

I would not make these again. The egg wash didn't work out so well so I just rolled them in sugar. They looked nice but were very crumbly and did not hold up well. They were also very bland.

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Sep. 23, 2008
This carrot cake truly is awesome. Nice and moist. Everyone loved it, even those who said they use do not like carrot cake enjoyed this. I left out the nuts since hubby is allergic but threw in a couple handfuls of raisins instead. One note, my oven temp is pretty accurate and it took about 20 min longer to bake than the receipe indicated using a 9x13" pan.

Yellow Squash and Corn Casserole

Reviewed: Aug. 9, 2008
A great way to use up all that yellow squash in the garden. I used 3 cups of squash instead of 2 and a little less sugar. It took about 45 minutes in the oven and I increased the temperature to 400 for the last 10 minutes. Next time will add some shredded cheddar cheese.

Marinated Grilled Shrimp

So good I can't wait to make these again. When I prepared the marinade I discovered I had no tomato sauce on hand so I had to use chili sauce instead. The combination of sweet and spicy was just right.

Boston Baked Beans

Reviewed: Jun. 7, 2008
These were good but too salty for our taste. My guests ate them but no one really commented so I'm not sure if they liked them or not. Also, I wouldn't say they were a lot of work but making them was certainly very time consuming. I was disappointed because I expected them to taste so much better than canned but they didn't. Not really worth the effort then, in my opinion.

Hoagie Dip

Reviewed: May 27, 2008
Really good. I cut the recipe in half and it still made a lot. I substituted Italian seasoning for the oregano and added a splash of red wine vinegar. I also served the lettuce on the side so that it was not soggy. It does taste just like a hoagie!

Herbed Corn

Reviewed: May 24, 2008
The addition of herbs really dresses up the flavor of plain old corn. I cut the recipe in half and steamed the corn in the microwave. I also melted the butter in the microwave then stirred in the herbs and let it sit for a couple minutes before adding to the corn. One recommendation, watch the salt, especially if you use salted butter. It was too salty for our taste so next time I will cut the amount of salt in half or leave it out altogether.
