Raspberry Chocolate Torte

I found this recipe a few years ago in a magazine. It's become a family staple. It's super easy and looks SO impressive. We usually use strawberries. It does work better to make this at least a few hours or the night before serving. Chilling in the fridge helps to keep it set up. Otherwise, it falls over easily once you start cutting pieces of cake.

Restaurant-Style Potato Skins

I disagree with the other people who say not to fry them. That's what makes this recipe SO much better than others I've tried. This really is an easy recipe. I like to use the scooped-out potato in Baked Potato Soup (also on this site!).

Luscious Spinach Artichoke Dip

Excellent party food! I doubled everything (to use up all the spinach) except for the artichoke hearts (only had 2- 6oz. jars)and cream cheese (I used the whole 8 oz. block), and used grated Parmesean (from a bag, not the can). I also threw in about 1/2 c. grated Monterrey Jack cheese. I had to bake it longer--around 40 min. I also used a stoneware baking dish.

Amish Macaroni Salad

It's the taste I've looked for for years in a macaroni salad! I cut the sugar, as others suggested to 1/4 c. I also only put in one stalk of celery. I used cole slaw dressing in place of the Miracle Whip which added a wonderful flavor. I agree with others who suggest to cut the dressing mixture in half, or use 16 oz. of pasta. I added tomatoes and cubes of cheddar cheese, too.

Spaghetti Sauce III

Easy, tasty sauce. You can mess around with the spices to your liking, but this is a good basic recipe. I left out the mushrooms (hate 'em!),and it turned out just fine.

BBQ Pork for Sandwiches

A hit with my family everytime I make it. Even my 5 year-old who doesn't like sandwiches loves these! I make it exactly as written, and it turns out perfect each time. I used Sweet Baby Ray's for the first time today. Thanks for the tip. It's tasty! (I had never heard of it here in Georgia, but I found it on the shelf at Publix.)

Slow Cooker Chicken Stroganoff

Very easy! I added 1/4 c. water (an idea I got from a similar recipe on another site), used Zesty Italian mix, cooked in the soup, put the chicken breasts in frozen, then shredded them at the time I added the cream cheese. Everyone liked them. It didn't make all that much. I'd probably double it if we had anyone else over. (Our family at nearly the whole recipe: mom, dad, kids ages 8, 5, and 1). This will be a good "soccer practice" day meal!

Sweet Corn Tomalito

Excellent recipe! It's very similar to the "sweet corn tamale cakes" at the Cheesecake Factory. Easy, too, in the microwave. Mine took a little longer than the 11 min. mentioned in the other post. I did 7 min. at 30% and about 7 on high. My husband said he would add more sugar or some honey next time. He wanted it a little sweeter. We took it to a party and had several requests for the recipe. Thanks for sharing, Eric.

Cooking Light magazine's Chicken Parmesan

Excellent! I was skeptical of cooking chicken parm. on top of the stove, but this turned out perfectly. The chicken was tender and juicy. And, I only had one pan to clean after dinner! The kids liked it, too. This will be a great meal for summertime when I don't want to heat up the oven.

Mary's Sugar Cookies

My mother has made these cookies for years. They are my favorite sugar cookies. I love the hint of almond flavoring. You can also shape this dough in to a log, wrap, chill, and use as a slice and bake cookie. Dip the tops in color tinted sugar--and you have an easy treat for the kids! I also don't think you can really get 5 dozen out of this recipe--unless you roll them out super thin. I usually get about 3 dozen.

Baked Potato Soup I

Very thick, rich potato chowder. My three children and husband loved it, too! I have 2 lactose-intolerant in the family, so I used 5 c. Lactaid (all I had) and 2 c. regular milk. I couldn't tell any difference. No one had any stomach problems after dinner. This is a keeper!

Bella's Rosemary Red Potatoes

Easy, tasty side dish. I used the Pampered Chef Rosemary Herb seasoning (1 T.). I cooked it a little longer--more like 45 min. for crispier potatoes. I baked these along with a pork tenderloin. Add a salad and rolls--great dinner!

My Chili

The best and easiest chili I've ever made. I made some changes: only 1 T. on chili powder, 2 t. cumin, 1 clove of garlic, 3 cans tomatoes (pureed--my kids won't eat chunks), 2 cans of mexican chili beans. Very flavorful, but not too spicy for my children (boys, ages 4 and 7).

Cinnamon Rolls I

Fantastic recipe! Mine needed the extra 3/4 c. flour. On my second time making these, I made the dough and rolled them out at night. I stored the pan in the fridge, took them out for about 30 min. in the morning, and baked. Fresh, hot cinnamon rolls for my birthday!

Famous Butter Chicken

Fantastic chicken recipe! Super easy, too! My husband and children loved it. I chuckle at all of you worried about the fat content. At our house we have carb issues, not fat issues. This actually fits in nicely with my diabetic diet and my husband's low carb diet. The only carbs are in the crackers, and I think that works about to about 10 g. of carbs per serving. I made it exactly as printed, and it turned out perfect--very moist. This is a keeper! It would be easy to double to feed dinner guests.
