Banana Layer Cake
I made this recipe with my exchange student and it turned out wonderful! I'm sure it would have been even better if I'd had a candy thermometer for the icing but, hey, it still worked out. It was great even a couple days after and I'm not sure about after that because it became very addicting.

Mexican Casserole
I made this for my family and we loved it. My mom liked it, and usually doesn't like mexican food like this, and then made it and took it to a church potluck where lots of people begged for the recipe. This doubles well, and if you do double it, you don't need to double the topping. Great way to get rid of stale torilla and corn chips.

Chocolate Chip Cookie Dough Cheesecake
This was the first cheesecake I'd ever made, and it turned out great! I personally had absolutely no trouble having this undercooked. I would recommend reading the cheesecake hints offered on this website, it helped me a lot. Also for a cheaper crust, use chocolate graham crackers and leftover cookie crumbs in the crust.
