I thought this was very good. I roasted the onion along with some red bell pepper, used about 3/4 cup of mozzarella and 1/4 parmesan instead of the cheddar and used 1/2 cup egg substitute. Also added the basil as someone else suggested.

Spicy Cilantro Dressing

This was very good. I added a clove of garlic to the other ingredients and processed in the blender with about 1/4 cup olive oil, then added only 1/2 cup of light mayo. Didn't use the sour cream at all.

Mahogany Chicken Wings

I thought these were very good, sweet and sticky just like I like them. I marinaded overnight and lightly sprayed the cookie sheet with spray oil, less clean-up.

Brunch on the Bayou

I made this for a post wedding family brunch and it was a huge success. I did increase the sausage (used Trader Joe's brand turkey italian). I hesitated about the sour cream but it really added a great flavor. I also thought the wine a nice addition. Everyone wants the recipe!

Balsamic Roasted Red Potatoes

These were really tasty, the balsamic vinegar was a nice addition. I cut the recipe in half with no problem. I did need to cook about 15 minutes longer even though I cut the potatoes into smaller cubes than suggested. Will make again.

Colleen's Slow Cooker Jambalaya

This was delicious. I used turkey keilbasa to cut calories and added a couple of tablespoons of tomato paste. I halfed the recipe with no problem. I will definitely make this again, it would be great and easy for company.

Vegan Baked Beans

I did not care for this at all. I cooked it according to the directions and the beans still needed to be cooked longer. It didn't taste right. I reheated the next day in a saucepan and added ketchup, more brown sugar and garlic powder.

Chicken Breasts with Balsamic Vinegar and Garlic

Chiles Rellenos Pie

I thought this lacked a little flavor, maybe sprinkling the chicken with cumin and chili powder would help. I have another chiles rellenos casserole with whipped egg whites I prefer, would probably not make again, though I like the addition of the chicken.

Roasted Vegetable Chicken

I oiled the chicken first and added thyme and rosemary, also used chicken stock instead of water and made gravy from leftover juices -- very flavorful, very moist.

Maple Syrup Casserole Made in Heaven

I too, wish I had read the reviews prior to preparing this dish for Easter brunch. It was very mushy in the middle, too crispy around the edges and bottom and had little flavor. No one in my family was thrilled with this one, in fact many good humored jokes were made at it's expense. Thankfully I halved the recipe, less to throw out.
