Coconut Carrots

These carrots are so delicious and so easy to do. Make sure you use cream of coconut and not cocnut milk.

Onion Chicken in Balsamic Sauce

This is a very tasty dish. I added some 1/2 tsp crushed pepper flakes. It added a bite to it, and was delicious.

Easiest Eggplant

It is easy, and very good. I used light Mayo and it was still very good.
