About this Cook
I'm a mother of five--three boys ages 24, 17 and 15 and two girls ages 19 and 14. I enjoy cooking big meals for my kids and their friends, and I'm having fun watching the kids learn to cook.
My favorite things to cook
I love to bake breads and pies, and my favorite recipe is one for dinner rolls that came from the kids' great-great grandmother. I also enjoy making Italian dishes such as lasagna.
My favorite family cooking traditions
It has to be cookies with the kids, and baking pies using my mother's pie crust recipe.
My cooking triumphs
Watching my 14 year old daughter make pie crust on her own, and seeing it turn out perfect on her first try! (yeah, she's still bragging because my crust split in two that day!)
My cooking tragedies
The first time I made a big meal on my own, I made lasagna. It looked good, but I didn't let it sit after taking it out of the oven, and ended up serving "lasagna soup". Made it a second time a few months later, and forgot the cheese. I also made a cool whip pie in high school that had a crust that my boyfriend couln't cut with a knife. He had to stop eating it because he said he was afraid he'd break my mother's plate.

Greek Garbanzo Bean Salad
YUM!! I'm a big fan of chopped salads, and this is a wonderful, light version. Very easy to throw together to. It tastes even better after you let it sit so the flavors can blend. I followed the recipe as closely as possible, I may have used a bit more cheese but I was guessing since I could only find an 8 oz container of Feta in the store. Perfect summer side dish!

Beer Butt Chicken
Don't let the blackened skin scare you---the meat in this chicken is very moist and flavorful! I followed the directions for the beer, and I would also suggest using warm beer to keep it from foaming. I also added some rosemary to the beer & butter mixture. I took another user's suggestion and lifted the skin before cooking and rubbed the breast with spices--I used lemon pepper and basil. I took a quarter of an onion and popped it down into the top of the chicken after I placed it on the can. I have a double chicken-roasting rack for the grill, so I did two birds. I just popped them on the grill and relaxed! No need to baste or anything.

Holiday Cheese Spread
This was way too salty, probably with an adjustment to the seasonings it would rate higher.
