About this Cook
I joined All Recipes when I was living with my b/f (now husband) we were desperate for something "real" to eat. Since that day we defintely have more options at dinner time. Now our son gets in on the cooking fun, I always come to allrecipes when I need something to make for his preschool.
My favorite things to cook
Thanksgiving and Christmas dinner are my favorite things to make. I love making the turkey and the ham and then all the sides. For about 4 years now I have been making the Caramel Apple pie II as my own. I have changed a few things to change it up a little. My family goes crazy for this pie! It's known as Amanda's famous pie and I can't go to a gathering without it.
My favorite family cooking traditions
Sweet potato casserole has been a tradition in my family at holiday gatherings. My mom made a version with canned potatoes, marshmellows, butter and brown sugar. I made it this way for my first few years but a couple of years ago I decided to change it. Last year I believe I perfected it (see triumphs).
My cooking triumphs
I have many triumphs! My latest was making homemade white bread from scratch. When pulling it from the oven with its perfectly brown crusts, I feel a sense of pride. Also perfecting my sweet potato casserole felt fantastic! It combines sweet potatoes, marshmallows, brown sugar and a few other spices in a delicious creamy blend wih a crispy streduel topping! YUM!!
My cooking tragedies
Omelets. I can not seem to master making an omelets.. I keep trying but it's not working out for me, yet. Just the other weekend I tried again, the top looked so good but the bottom was burnt and yucky!

Caramel Apple Pie II
Everyone at my house loved this pie last year at Christmas. I was disappointed though, it was extremely runny. I am going to make it again this year, I am just going to cut back on the liquids. Even with it being runny though, it was very good! UPDATE: after a few more years I think I have it perfected. Here's some of my hints: mix the apples you use (I use granny smith and jonathan apples- granny smith is important to control the sweetness). Cut down on the sugar and butter. Add an extra tbl or so of flour. With these changes the pie is no longer runny... Its just YUMMY
