A tropical girl at heart! Came from New England to Florida and realized how much I love the heat. At 30yrs old, I met an Italian man vacationing in Fl. We fell in love and am now living in a small town in Italy, teaching a bit of English and raising my incredible 8 yr old daughter.
My favorite things to cook
Being in Italy, I don't have the convenience anymore of shortcuts. I like to cook calzones that my dad taught me to make with broccoli, onions and tuna. Stuffed clams, tempura, i dabble in a bit of Mexican, fried rice, meat dishes.

Insalata Caprese II
the photo looks wonderful. If I may suggest first , using only Buffala mozzarella. It's more expensive but a higher and finer quality. Also cut slices equal to that of the tomatoes and layer them in a circle, tomatoe, cheese, large basil leaf. Then drizzle vergine oil, and a sprinkling of balsamico.
