Roast Beef with Coffee

Not my cup of tea. Meat was not tender and the coffee did not flavor it enough. Strange, I've used coffee in stews and loved it, but this was not good. Sorry.

Mini Meatloaves

I'm not a big fan of meatloaf but my husband and his coworker won't stop asking me to make these. I did use this recipe to make one large loaf and it worked just fine.

Cream of Chicken Breasts

Want a recipe that's easy to make and chicken that is tender enough to cut with a fork? Then this is the recipe for you! I followed directions to the T and made a side of whole grain rice to go with. I think next time I may try to add a few capers for zip.

Pork Chops and Sauerkraut

Just LOVED this recipe! What a great spin on plain old porkchops. As others, I did not have any apple juice handy, so I substituded applesauce, otherwise, I followed the recipe to the T. Make a side order of potatoes to go with, and you have a complete meal in 30 minutes. DELISH!

Spiced Beef Stew

I like real veggies in my stews so I added baby carrots, celery, and potatoes and used a whole can of beer and additional beef broth. DELICIOUS! Hubby gobbled it up as fast as I did!

Sour Cream and Chive Mashed Potatoes

Yum Yum Yum!!! Followed recipe to the T except I added a little sprinkled cheddar cheese on top at the end. Looks, smells, and tastes delish! Very easy.

Easy Bake Brisket

Very delicious and easy to make. Had all the ingredients at home. I made this one in the oven instead of a crock pot (since it was over 8lbs vs the 4lbs in the recipe) and slow cooked it (covered) on 200 degrees all night long. Came out TENDER and juicy in the morning! Make sure to bake FAT SIDE UP. I also added a bit of brown sugar. Note, this will NOT be one of those brikets with a crunchy sugary glaze, but very moist and tender like a roast. Makes for excellent sandwitches!

Slow Cooker Stuffing

Stop the presses! I HATE stuffing, but made this for my guests and wound up eating most of it myself! I cut the liquids by half (as others had recommended) and cooked on low heat stirring occasionally. Worked like a charm. This will NOT be one of those dry crumbly stuffings, but rather kind of mushy. I prefer mushy and the flavor is OUT OF THIS WORLD!

Grandma's Green Bean Casserole

Much better (in my humble opinion) than your usual version. I did crumble twice the amount of cracker topping on mine (I 'ike some crunch in my eating). This is a great alternative to the every-year bland old version that uses canned onions. Yum!

Beef and Mushroom Stuffed Peppers

Delishous, quick, easy, and a lower carb alternative. I used ground venison instead of beef and it turned out fabulous. I added cheese into my mixture and stuffed some graded cheese into each bell pepper. Good recipe!

Pork Butt Roast with Vegetables

Not much to say except DANG!!! I couldn't even use a knife on this roast because it simply SLID through the meat. I had to peel it with a fork after cooking it was soooo tender and moist. Followed recipe to a T. Did NOT, however, add potatoes as I am watching my carbs. Substituded more carrots and portabella mushrooms for potatoes. Yummy!!!!!

Home On The Range Tuna Salad

Hubby tried this dish and made a debonaire attempt at eating it with saltine crackers but gave up after a few bites. It really did sound delishous to me, but had no flavor and the strangest consitency. The lemon pepper was a bit overpowering and it could definetely use some pickles or relish. I'm happy for those of you who liked it and will make it a regular, but I will not be one of those. I think I'll stick with my good ol' trusted tuna recipe or try elsewhere. Thanks for sharing just the same.

Baked Pork Chops II

Absolutely Ultimate Potato Soup

Ohhhh Myyyyyy Goooooodddd!!!! I have, for a long time, stayed away from pasta's and potatoes, but this soup is too delicious to ignore!!! I made this mainly for my hubby who LOVED it. I, myself, ate 3 bowls! My coworker begged me for the recipe after I gave her the leftover soup to try. She said she'd rather have this soup than Turkey on Thanksgiving! LOL A++++ all the way!

The World's Best Turkey

I took the risk and it paid off!!! EVERYONE loved this turkey! I generally slow cook my turkey all nite, but this method was much faster and the turkey was VERY flavorful and tender! For a bit extra tendercy, try cooking a bit slower at about 250-275 degrees for an extra hour and a half or until golden brown. Also made great gravy! Two of my finicky guest already asked me to give them the recipe. WOW!

Simmer Family Turkey Stuffing

Light, fluffy, and delicious side-dish. I did not stuff my turkey with it, but rather cooked it in the oven. I'm not realy a stuffing eater, but those who came to my home and tried it, loved it! :)

Barlow's Blackened Catfish

I used only half the cayene and had a ton of seasoning left after coating two large filets. You can place the leftover seasoning mixture in a zip lock bag to reuse next time. Spicy, tangy, and delicious!
