Cherry Cheesecake Frozen Yogurt

Great frozen yogurt recipe, and it was still rich and creamy with low fat cream cheese and low fat yogurt. I used frozen strawberries instead of cherries and chopped them in the food processor.

Chicken and Sweet Potato Bake

I made this in the slow cooker with boneless chicken breasts. Overall, it was pretty good, but I found the ginger overpowered the other spices. I might use pumpkin pie spice next time.

This tasted great, but the extra fluid makes it a little more messy than the marinated salads I usually make. I'm going to try it with Mrs Dash and Stevia next time.

Grilled Cilantro Salmon

Great low sodium recipe! Good even for those who are not big salmon fans. P.S. It looks like the nutrition information for this recipe is calculated as if you ate the entire contents of the marinade instead of discarding most of it after marinating.(And if you prepare the recipe as directed, you will discard much of the marinade). The Calorie and carbohydrate content in the actual dish should be much lower. Hope that helps encourage you to try this dish! -Jackie, RD

Cranberry Rice Pilaf

Good, quick dish. I played with it a little: instead of juice, I added 1/2 cup water and 2 mardarin oranges, sections cut in half, and I added 3/4 cup cooked yellow split peas and 2 tbsp chopped walnuts to add a little more protein

Sausage Linguine with Ginger Pumpkin Sauce

This sauce turned out pretty good, although I took quite a few liberties with it: I made it vegetarian and substituted lima and garbanzo beans for the sausage, I used a combination of plain yogurt and cream cheese instead of cream, and I mixed in some parmesan cheese at the end.

A pretty good omelet with a hint of sweetness. I added cinnamon when cooking the apples and used milk instead of cream in the egg mixture, both of which seemed to work fine.

This was fine, but not great. I used applesauce instead of bananas, and fat free milk with a little canola oil instead of whole milk, which seemed to work. Maybe it would have been better if I followed the recipe exactly, though.

Maple-Curry Chicken

Very good! I made it with milk (mixed with a tablespoon of butter and teaspoon of flour) instead of cream since I didn't have any. I'm sure it would be richer with cream, but it was still good my way.

Quite yummy, but you definitely need the glaze. If the top of the cake doesn't have cracks (which mine did) you may want to poke holes in it to let the glaze seep through.

Super Easy Fruit Dip

It doesn't get much easier than this! I mixed lowfat vanilla yogurt with light cool whip and brought it to a potluck with fruit. People asked if it was whipped cream and wouldn't believe me when I told them how easy it was to make!
