Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce
Used 8 oz low fat cream cheese, added 1/4 cup white wine and 1/4 cup skim milk. Also added asparagus spears to the mushrooms. Make sure to salt and pepper to taste. Is bland without seasoning. Doubled the garlic. Used whole wheat linguine. Restaurant caliber pasta dish!

Jamie's Cranberry Spinach Salad
I also added crumbled bleu cheese, sliced red onion, and cherry tomatoes. The homemade dressing and salad was a hit with my dinner party friends. They asked for seconds AND the recipe.

Red Enchilada Sauce
I also added a little more chili powder and used tomato paste instead of tomato sauce. Added a Tbsp of chopped fresh cilantro. Delicious with vegetarian enchiladas made with a cream cheese/TVP filling. Served with a tomato, avocado, and mango salsa.
