Quick Sausage and Bell Pepper Calzones
I followed the recipe with a few minor modifications. I used Pillsbury Pizza Dough. I wanted to make small ones, so I cut out 5 inch circles and was able to get 6 or 7 from each roll of dough. I scaled the recipe to make 12 servings and was able to use almost all of the filling. I used red and green pepper since I didn’t have a yellow one. For the sausage, I used half sweet Italian and half sweet Italian chicken sausage/ I brushed the tops with an egg wash and sprinkled with Parmesan Cheese before baking. These were really delicious! I also made Spinach and Ricotta Calzones from this site and served with warm spaghetti sauce.

Unbelievable Spinach Calzones

I scaled the recipe to make 12 servings and used 1 and half rolls of dough and still had a bunch of filling leftover. I brushed the tops with an egg wash and sprinkled with Parmesan Cheese before baking. They came out great, although when I make then again I will probably add some garlic powder and some additional seasonings. I also made Quick Sausage and Pepper Calzones from this site and served with warmed spaghetti sauce.

Eggplant Parmesan II
This was very good. I made a few modifications - As suggested by other reviewers, I sliced the eggplant (I used 2 good size eggplants), salted it and let it sit for 20 minutes, then I rinsed and patted dry. I used egg substitute, instead of real eggs. I baked the eggplant 10 minutes on each side and then turned the broiler on and broiled on each side for a minute and a half. This made the eggplant a little crispy. Other than that I followed the recipe. My husband and I both really enjoyed this and we are looking forward to the leftovers today.
