Buttery Corn Bread

I wasn't expecting much from this cornbread, but chose it because I had all the ingredients on hand. I was very pleasantly surprised, as it turned out to be perfectly sweet and had a nice moist texture. I did add a little extra cornmeal and a little less flour. One of the best quick and easy cornbreads I think I've had. Will put it in the recipe box to make again.

Homemade Vanilla

The longer the beans steep, the better the vanilla will be. I don't think two beans is going to get much done in several weeks. I use five 6" Bourbon beans (split open) for every 2 cups of vodka, and let it sit for a year, shaking it once a week. Two beans just doesn't cut it.

Mom's Brussels Sprouts

This was my first foray into brussels sprouts, and I was pleasantly surprised. I definitely have a sweet tooth, so it was bound to be decent, but the way the walnuts and the butter sauce and the sprouts go together was really nice. The only thing I would do differently is to toast the walnuts to bring out their flavor even more.

Gorgonzola Pear Pasta

This will be a five star recipe with a few changes. It would easily serve three people, and if it was part of a whole meal, probably four. Next time I will make the sauce in the pot before adding the pasta back in, just to make things easier. I think it needs an additional pear, so you get the extra bit of sweetness and more contrast of flavors. I will also add an extra tablespoon each of cream and parmesan, for a little more richness. Very tasty and different; it would definitely impress company.

Slow Cooker Fruit, Nuts, and Spice Oatmeal

This turned out pretty well. I only cooked it for six hours, and it was the perfect consistency, but my slow cooker does run hot, so I was expecting that. I had pretty tart apples, so I did add some brown sugar, and I waited to add the nuts until it was time to eat so they wouldn't lose their crunch. You could really alter the fruits, nuts, and spices in this to get a different taste every time. I will be making this more as winter sets in.

Sauteed Apples

I wanted something to mix into oatmeal, so I cooked these a little longer and broke them up into smaller chunks in the saucepan. Didn't bother to peel the apples, and I followed other reviewers advice and added a dash of nutmeg and a splash of vanilla. Made for some very tasty oatmeal.

These were just okay. I think the topping definitely needs to be cut in half. They just seemed bland to me, especially if you got a bit that didn't have any fruit in it.

David's Yellow Cake

With chocolate frosting, this tasted good. However, all by itself, I thought it was lacking a little in the flavor department. It was nice and moist, and had a nice crumb to it. Before anyone accuses me of comparing it to boxed cake mix, let it be known that I don't particularly like yellow boxed cake mix. I have just had more flavorful from scratch yellow cake.

Easy Morning Glory Muffins

These muffins were much better than I was expecting. They were moist, tender, and very tasty. I made a few small changes. I used half whole wheat, half white flour, replaced most of the oil with applesauce, and used 1 1/2 cups of finely shredded carrots and 2 shredded apples. I also squeezed the juice out of the shredded apples and carrots using a cheesecloth so the batter wouldn't get runny. Perhaps my muffin cups are small, but I got 21 muffins out of this batter, not 12, but I'm not complaining. They should freeze well.

Cranberry-Cardamom Muffins

I cut the recipe down to six servings and put the batter in a mini loaf pan, only to discover I should have used two mini loaf pans. There was some serious overflow. But that was my fault. The bread that stayed in the loaf pan turned out nice and moist, with a nice crumb to it. I used frozen berries, but I think I would prefer it with fresh berries, to prevent the batter from turning blue. This was very tasty, and I will definitely make it again.

Whole Wheat Chocolate Banana Bread

I would have liked to give this recipe more stars. The texture was nice, and the loaf turned out very moist (I had small bananas, so I used four instead of three). The whole wheat flour works very well in this recipe. It just seemed that the chocolate and banana were competing with each other instead of complimenting each other. I think I would prefer to make regular banana bread and add chocolate chunks to it, rather than adding cocoa powder.

Creamy Fruit Salad

I guess I'm just not as enamored with this salad as everyone else. It tastes good, but not great. Not something I would go out of my way to make again. This also does not keep well, so don't be like me and forget about the leftovers in the fridge.

Caramels

I made a half batch to use up some heavy cream and evaporated milk I didn't want to waste. The recipe doesn't specify, but you will want to use salted butter for this recipe, or add salt if you are using unsalted. I used my regular unsalted butter, and it definitely needs salt. This is a pretty easy and straight forward recipe; it would be good for someone making caramels for the first time. I do agree with others that only going to 240 or 245 degrees would be better. While they weren't bad, they just weren't nearly as good as some other recipes I have made, so I doubt I would make these again.

Biscuit Baking Mix

I don't use enough Bisquick to justify buying a whole box, so for those rare occasions when I need some, this works like a dream. I scaled the recipe down to serve two, which makes 3 cups of biscuit mix. You would notice a difference in taste between this mix and the boxed stuff if you were making just plain pancakes, but if you are using it to make blueberry pancakes or as a quiche crust or something, it won't really taste different at all.

Honey Butter

Excellent. Be sure to use salted butter. I used unsalted and wound up having to add some salt. Added a dash of vanilla, but it is great without it, too.

Whole Wheat Swirl Bread

This was tasty bread, and you have to love the presentation. However, I would flip the directions and make the whole wheat bread first. The white rose so much faster that the wheat never had a chance to catch up, so make the wheat first so it gets a head start and both doughs will finish rising closer to the same time. I think next time I will add dark molasses to the wheat bread instead of the honey, just to give it a darker color for even more contrast. A good bread overall.

Oatmeal Pancakes

Very filling. I used whole wheat flour, and only two tablespoons of butter (all I had left). This recipe could definitely benefit from some salt, as it is just a touch bland, and a little cinnamon never hurt any pancake. A good place to start, though.

Chocolate French Toast

This is a nice change from regular french toast, but I had to cook mine at more of a medium-low heat to cook it through without burning the cocoa powder. I would not make this all the time, it is more for a breakfast party or holiday breakfast or other occasion, since it is a little rich.

Rhubarb Jam

Perhaps I didn't have the full amount of rhubarb, but this had too much orange flavor for me. It set up perfectly, though. I would leave out some of the sugar to make it more tart, but that could really vary depending on your rhubarb.
