Let the kids do the cooking! That was how I learned to cook. If you wanted something other than hot dogs and mac 'n' cheese, you made it yourself. I was doing stir fries in the 4th grade.

Too many to mention. The first time I tried to make a Dutch Baby, the inside of the oven ended up catching on fire!

Quick and Easy Green Chile Chicken Enchilada Casserole
This was really tasty and really cheesy. I ended up with way too many tortillas left over, so I am not sure what went wrong. I think next time I will do a couple of layers of tortillas for each tortilla layer. I also followed other reviewers and mixed the chicken with the sour cream mixture before spreading it. I also added additional spices like chili powder and onion powder to the mixture before spreading it. It added another layer of flavor, but I am sure the dish would have been fine without it.

Brown Sugar Meatloaf
While I really liked the taste, I had some problems with this meatloaf and all the leaking of meat juices. Next time I will follow other reviews and put the glaze on top after it has cooked most of the way and I have had the opportunity to drain the meat juices off.

Grandmother's Buttermilk Cornbread
I grew up with my mom making sweet cornbread out of a box. This is so much better and so easy to make. I do bake it in a cast iron skillet (because that is the only way to make cornbread). I also use a milk/vinegar substitute if I don't have buttermilk on hand. Usually I just put a tablespoon of white vinegar in the bottom of a liquid measure cup and then fill it the rest of the way with the milk. Delicious. I have already made it half a dozen times in 2 months.
