Fabulous Beef Tenderloin
Mouthwatering! I have made this with both regular butter and soy sauce and unsalted butter and low-sodium soy sauce. The unsalted/low-sodium version is MUCH superior. You still get PLENTY of salt and the flavor of this very expensive cut of beef is not drowned out. This is by far my family's favorite way to eat tenderloin. Plan on more time in the oven than stated in the recipe. Wonderful recipe!

Angel Hair with Feta and Sun-Dried Tomatoes
Fabulous! This has become a staple in our house. Even my picky 4-year-old gobbles it down. The cilantro really adds a wonderful flavor, but it's also good without it. I do add a little more olive oil to make it a tad moister.

Mock Coconut Pie (Spaghetti Squash Pie)
This was more coarse and dry than I was expecting. I omitted the spices and used Splenda, but maybe should have added some coconut extract and cream to the batter. Next time I will cook the squash TO DEATH! This is a spaghetti squash pie, not a mock coconut pie!
