Bow Ties with Sausage, Tomatoes and Cream

Excellent flavor! I used half and half instead of heavy cream and omitted the salt. I served it over penne pasta along with some homemade Italian bread. This was soooooo good!

Braised Beef Short Ribs

As I am not a big fan of short ribs as they can be very tough and chewy, I fixed them in my pressure cooker. They were pretty tender and not too bad.

Sweet Green Bean Bundles

My guests love these. Since bacon is so salty, I used garlic powder. I also didn't use as much butter as called for. I find that keeping the foil on prevents the bacon from getting crispy so I baked them at a lower temperature 300 degrees for about 45 minutes.

Spiced Yogurt Pound Cake

I really don't taste the yogurt. It's very sweet to me. It is rich and moist. I sifted some powdered sugar on top. This is great in the morning with a cup of coffee.

Baked Flan

This was excellent! My friend from Monterrey, Mexico was here visiting and I fixed it for him and he just raved over it. Just sweet enough. My first attempt at the caramel sauce to me wasn't enough to cover the bottom of the dish so I made a double batch of the caramel sauce. I ran hot water over the pie plate and buttered the bottom of it too before I poured the sugar mixture in it. I baked it about 20 minutes longer than called for. This is better than any creme brulee I've ever had!

Aunt Anne's Coffee Cake

This was pretty good although I made my own streusal by combining 3/4 cup brown sugar, 1 tsp. cinnamon and 1/2 cup chopped walnuts. I like a thick coffeecake so I used an 8-inch glass cake pan and layer the batter with the streusal ending with streusal on top. Since it was thicker I had to bake it for 50 minutes.

Whole Wheat Banana Nut Bread

I added only 1/4 cup honey and added 1/4 cup sugar. I used two bananas and added 2 squares of semi-sweet chocolate cut into chunks. This is pretty good warm. The chocolate is gooey and gives the bread a great flavor!

Cheesy Polenta

I also substitute chicken broth for the water. I added half sharp cheddar and parmesan cheese. I noticed that with the chicken broth which generally has salt in in and the cheddar cheese which can be salty, and I didn't catch that the butter I used was NOT unsalted, and the fact that with the kosher salt added, I thought the polenta was way too salty. Next time I will use unsalted butter and omit the kosher salt. I did add a pinch of sugar and I think that helps balance out the flavors. I had this with pork rolled up with capacola and a demi glaze sauce. Marvelous! I even used the leftover polenta for breakfast the next morning. Pancake syrup goes great with it!

Easy Rum Cake

This is absolutely to die for! I like pecans better than using walnuts and I used Captain Morgans original spiced run. Next time I think I'll take the advise from someone and before removed the cake from the pan, to poke holes and pour half the glaze on and then remove the cake and pour the remaining glaze over the cake. I used long wooden kebob skewers to poke the holes and it worked out great. The glaze is what makes this cake!

Round Steak Sauerbraten

I browned the meat first and then through everything in my crock pot on low and cooked it all day. I thickened the sauce with a little cornstarch and served it with wheat noodles and a side of corn. This was really good!

Honey Wheat Bread I

I warned up the evaporated milk and threw all of the wet ingredients in my bread machine, then the dry ingredients and lastly the yeast and set it for the "dough" cycle. I then shaped it, let it rise and baked it in my regular oven at 375 degrees for about 30 minutes. It was moist and really good!

Honey Mustard Grilled Chicken

Chiles Rellenos (Stuffed Peppers)

My husband fixed these and they were delicious but he said they were such a pain to make that he will never make them again! We liked them stuffed with the ground beef and he used monterey jack cheese instead of the mozzarella.

Thai Pork with Peanut Sauce

I don't care for red bell pepper so I left it out. I added regular onions too. The sauce was a dreary brown color but very tasty. Next time I plan on sauting some jullienned carrots and adding to it.

Pretty Chicken Marinade

I halved the recipe and then halved the soy sauce again plus substituted Dijon mustard because I didn't have any spicy brown mustard plus I didn't have on hand the reduced sodium soy sauce so I used regular. I thought with only using about 1/6 cup of the sodium, it would be fine. Maybe if I would have used the low sodium it would have turned out. The flavor was fine but it still was extremely salty! I ended up throwing some Masterpiece BBQ sauce on it just to be able to eat it. I will definitely not make this again.
