About this Cook
When I was a teen I self taught myself how to cook by baking. I'd crack open my mom's Betty Crocker cookbook and make a random recipe. I still have a deep love for baking. After getting married I longed to better my cooking skills...it has been my biggest achievement :)
My favorite things to cook
Mexican food
My cooking triumphs
Soups....some of the best food sharing experiences have been soup to my friends and family.
My cooking tragedies
Lemon meringue pie...has always been my saddest cooking mishap.

Chocolate-Zucchini Cupcakes
Love this recipe! The only alteration I did was omit the nuts due to a food allergy in my son's class. This will not make or break the recipe. (I do love nuts..but they were great even without) I highly suggest anyone trying this recipe out...it will change even the most hated squash/zucchini haters hearts! Enjoy :)

Classic Minestrone
Once you taste this soup all others will pale in comparison. (i.e resturant, can, etc) The first time I made it we were stationed overseas so I had to subsitute some fresh veggies for canned. AS LONG AS you use a fresh leek you will get good results. If you are able to make it exactly as intended it will be outstanding!! Enjoy :0)
