Banana Crumb Muffins

I have to agree with everyone here. The crumb topping makes these muffins a stand-out. This is a very easy and delicious recipe. Don't throw away overly ripe bananas -- make these muffins instead! VERY ripe bananas have a wonderful texture for bread and are very sweet.

Corn and Zucchini Melody

This vegetable dish is a WINNER. Face it: bacon grease makes everything taste better. I added some chopped red bell pepper to make this a colorful and delicious dish. The leftovers were great...the zucchini was a little more soggy, but it was wonderfully flavorful.

Cheesy Ham and Hash Brown Casserole

I love each of the ingredients included in this recipe. That, coupled with the rave reviews, had me making this recipe right away. Yes, it did smell absolutely wonderful while it was baking, but I found that it was soooooo salty. Guess it's the soup, ham AND 1-1/2 cups of parmesan cheese. If I make it again, I will definitely use less parmesan and see if I can find a low-salt soup.

Burgundy Pork Tenderloin

This recipe was FANTASTIC. After reading a number of reviews stating that the meat did not have a very good color, I made the following modification: I sprinkled 2 TBSP of minced garlic over the onions and celery. I then baked the tenderloin, covered in foil for 20 minutes on 350. I then removed the foil and increased the temperature to 500 and continued to roast for 10 minutes; I turned over and roasted an additional 10 minutes. Remove from oven when the meat registers an internal temp of 160 degrees. Move meat to a platter and cover with foil, allowing it to rest while making the gravy. This roast was moist, flavorful and oh-so-tender. The gravy was wonderful served over mashed potatoes.

Amy's Garlic Egg Chicken

Absolutely delicious. There is way too much bread crumb mixture. Either make half, or save half for the next time! The chicken has so much flavor and comes out soooo moist. The next time I make it, I'm going to serve it on top of angel hair pasta with marinara sauce, french bread and a tossed salad.
