Fresh Cranberry Relish

Made some mods - used only 1 apple, added some chopped celery and walnuts. I also dissolved 1 pkg cherry jello in 1 c of the drained juice. Wanted to add some more red color.

Steak and Spinach Salad

I thought this recipe was rather vague, which lends itself well to adaptation. I marinated my meat in a mixture of oj, lime juice, garlic salt, and pepper for about an hour and then cooked it on the foreman (4 minutes first side, flip, 3 minutes on the second side.) I let the meat sit 15m before slicing it with the grain. Served it buffet-style with the orange viniagrette from this website. Let the hubby pile on the ingredients to his liking: spinach, steak, tomatoes, red onion, craisins, sunflower seeds, and mandarin oranges. He gave it a big thumbs up!

Best Brownies

Yum! Crunchy edges, soft center. 25 minutes was perfect in my oven. For the frosting be sure the butter is very soft. I added a pinch of salt and 1.5 tsp of kahlua!

Spinach Pasta Salad

Absolutely delish! My subs: 9 oz of regular-size spinach, plain feta (couldn't find the flavored), 1/2 red onion, 6 oz can black olives sliced in half, 4 tsp lemon juice. As a side, this can easily serve 12, we had about half left over after serving 7. Will be making this next weekend for my wedding reception.

Was planning on serving this for my wedding reception. Good thing I practiced it the week before. Easy to whip up, but did not look appetizing once cooked (unfortunately mine browned unevenly and the crust got overly dark dispite the foil.)

Quick Gnocchi

Perfect for a gnocchi novice. Super easy and quick to make. Definitely would serve 4 as a side. I used these for the Gnocchi with Sage-Butter Sauce recipe from this site. Not quite as tender as I've had in restaurants but still delish!

Angel Hair Pasta with Shrimp and Basil

Delish! I used 3 cans of Italian tomatoes (drained 2), 5 cloves garlic, 2/3 lb pasta, and a pinch of red pepper flakes. Big hit for my parent's anniversary dinner. Will be making again:)

Baked Pork Chops I

Delicious! Made it exactly as written - baked it for 50 minutes instead of the recommended 60. Prep was easy, but you've got to plan ahead because it takes about 2 hours from start to table. HUGE hit, such a hit it only served 3 rather than 6 so definitely make extras.
