Cocktail Meatballs

I admit, I cheated a bit...I used frozen meatballs, but the sauce is very tasty!! This is so easy to make and is perfect for parties or even just if you want a small appetizer for two. So yummy! A classic and a keeper!

The Best Parmesan Chicken Bake

I thought this was excellent! I was a little leery of making it considering it had a lot of negative comments, but I am glad that I did. The only thing I did different was I browned the chicken for just a bit first and then assembled it. I baked it for about 40 minutes and it was wonderful. Yum!! A keeper!

Saltine Toffee Cookies

Excellent and super easy to make! I did exactly what the directions specified--I didnt touch it once it started boiling and it turned out great. I used semi-sweet chocolate on the top and instead of pecans, I used sliced almonds. My husband says it tastes exactly like Almond Roca--which we both love. I plan on making this more often; it is so easy and cheap to make. A keeper!

Cheese Fondue

I worked at a Melting Pot for several years in the early 90's and this is the exact recipe we used for our traditional swiss cheese fondue. It's excellent! It's also good with a smidge of Kirschwasser (cherry brandy) too. Yummy!!

Jif® Peanut Butter Blossoms

I made these exactly as stated except I took the advice of the Top Reviewer and made these in a mini-muffin pan. I used festive liners, rolled a small ball of dough in the sugar, baked them for exactly 8:20, and then squished a Reeses Peanut Butter Cup in the middle right after I pulled them out of the oven. They were the perfect texture and doneness. I think they are super yummy! I never ate traditional Peanut Butter Blossoms prior to this, but think these are excellent! I plan on making them a part of my Christmas cookie collection from now on.

Bread and Celery Stuffing

This is a classic! Last year, instead of using Swanson's chicken broth in a can, I used Swanson's Chicken Stock in the resealable bottle and loved it. It has a richer flavor and really added a lot to the taste of the stuffing. I will never used the canned broth again. Tips: this is great with some apples diced and sauteed with the onion and celery, too. I always use more onion and celery than called for because it reduces in size when sauteed, and add a beaten egg or two (depending on the amount I am making) to help bind it all together. Also--if you can find it in the store, I recommend using Bell's seasoning in the little yellow box. This is the stuffing/dressing I grew up on. Yum!

Perfect Pumpkin Pie

This is the best! I've been making this super easy recipe for years and just pulled one out of the oven this minute. It is perfect! I have been wanting to use fresh cooked pumpkin for a pie, and when I do--this is the recipe I am going to use. Yummy!!!

Ham Broccoli Braid

This is very good! I cooked the onion, broccoli and ham together along with one minced clove of garlic. I also added about 1/4 cup of sour cream and a dollop of mayonnaise to the dijon. In addition to swiss, I added sharp cheddar cheese--about a 50/50 blend. I also only used 1 crescent roll instead of two and it turned out to be the perfect size for just us two. Very tasty!! The only thing I would do different next time is cut the dijon down to 1 tbsp. A keeper!

Hot Artichoke and Spinach Dip II

To. Die. For. This is THE best Artichoke Spinach dip I have ever tasted. I made it as directed, all the way down to the garlic salt--but I did add about 1/8 cup additional parmesan cheese (wanted to empty the remaining smidge out of one container). SO good! Look no further--this is the recipe to beat! A keeper!

Salmon Spread I

Very good! I used two 4oz packages of smoked salmon, added a bit of horseradish, dill weed, extra lemon juice and splash of hot sauce (Louisiana Hot Sauce) and it was very tasty.

Banana Bread VII

I have been making this recipe for years and I am telling you--it is THE best banana bread recipe you will ever find. I always receive compliments on it. The trick is to use really ripe bananas--like yucky, brown bananas. It gives the bread a richer banana taste. Yum! Look no further, baby, because this is it!!!

Oven Pot Roast

This is very good! I skipped the butter and seared the roast in olive oil. I also seared the carrots and onions with 3 smashed cloves of garlic. I placed them on top of the roast and they werent mushy at all. I used vermouth, a whole packet of Onion Soup mix, low-sodium Cr. of Mushroom soup and a can of Campbells Beef Consumme. I am going to skip the flour next time because the gravy was a little too thick for my liking, but it was very tasty. I used my Cuisinart enamel cast-iron dutch oven and it was so tender in under 3 hours. Very good!

Baked Zucchini Chips

Excellent! I used whole eggs instead of just egg whites since I didnt want to hassle with it and they turned out perfect. Crispy and very tasty! I doctored up the breadcrumbs a bit and added extra parmesan. So good--such a flashback to the 80's when we would eat zucchini sticks at happy hour. Love these!

Spinach and Orzo Salad

Very good! I added artichokes and fresh basil instead of dried, since I love fresh basil in salads. I toasted the pines nuts, too. It's perfect for a potluck because it makes a ton. Yummy and not heavy, which is nice for summer. I plan on making this again and again. Definitely a keeper!

Baked Tomatoes Oregano

Triple Berry Crisp

I've made this twice now--both times using frozen fruit. The first one I made was strawberry, raspberry, blueberry and it was excellent. The second time with peaches and blueberries--again excellent. Just thaw the fruit first and mix in a tiny sprinkle of sugar (doesnt need it, really) and voila! Since there are only the two of us, I halved it and baked it in an 8x8 glass dish. This is so easy and so, so good! A keeper!

Owen's Mozzarella and Tomato Salad

Blue Cheese Burgers

We love these! I always add chopped, cooked bacon and it really adds a lot of flavor. I also use a little minced red onion instead of the chives because I sometimes cant always find chives at my store, so the red onion works well. Green onion would be good, too. These are so, so yummy! A keeper!
