Cowboy Oatmeal Cookies
These are good, but a bit too sweet for my taste buds. To be honest, I think the butterscotch chips contributed to this. I halved the recipe and subbed coconut oil for the oil & margarine, but otherwise made it as written. Next time, I'll use about a third less sugar if I use the butterscotch or any other sweet addition.

Buttermilk Pancakes II
These were really fluffy and good. I cut the recipe by 1/3 and ended up with 6 medium to large size pancakes. I also used self-rising flour, so I omitted the addition of baking powder, baking soda and salt. I let the batter sit for 10 minutes before cooking. Good stuff and so easy, I don't even know why I've been a box mix user for so long.

Chess Cake
It was okay, just wayyyyy too sweet, and I only used 2.5 cups of confectioners sugar in the topping.
