I'm a special education teacher and I have three children; a daughter away at college and two teenage boys at home.
My favorite things to cook
I love to bake, whether it's scones, biscotti, or cookies. I also enjoy coming up with new and different ways to serve the same old ingredients at dinner time. I rarely leave a recipe alone, but I've learned to write down any changes I make that receive rave reviews from the kids!
My favorite family cooking traditions
Whipping up party foods for any occasion, whether we're watching the Super Bowl or hanging out on the deck. Teenage boys seem to love a smorgasbord of options to graze on, and leftovers make great snacks after school!
My cooking triumphs
Hmmm...copying a local baker's sugar cookies that my colleagues all love. There are only three ingredients, and it took some time and tweaking, but I finally came up with the perfect combo. The best triumph of all is having a 15 year old boy who is as likely to fix mac and cheese from a box as he is to whip up shrimp scampi or chocolate layer cake with homemade fudge frosting!
My cooking tragedies
Making the mistake of believing well-meaning children! They have learned to be honest if I've tried something new, and now they don't get repeats of items they once claimed to love, only to avoid hurting my feelings:-)

Parmesan Baked Potatoes
These were awesome! Only thing I did differently was add sprigs of rosemary and sage while the potatoes baked. These were also wonderful leftover, sliced into wedges and reheated in a bit of olive oil on the stove.

Pork Tenderloin with Dijon Marsala Sauce
Wow! This pork tenderloin was the best ever. Fixed exactly as is and everyone raved...even picky teenagers! Served with Rosemary Red Potatoes (this site) and homemade applesauce for a fabulous Sunday dinner.

Peanut Butter Apple Dip
This dip is a huge hit every time I make it. In addition to fruit, I served Cadbury chocolate dipped cookie sticks and everyone gobbled them up!
