Oatmeal Apricot Almond Bites

I was looking for something that would be similar to these Aussie Bites I get at Costco. These Bites are not dense like the Aussie Bites (I'm thinking about trying it and not putting in the Baking powder). So I did make changes (for all those who don't like that, too bad). Because of the previous reviewer, I only did 1/4 c. of honey and brown sugar. I didn't put in cinnamon or nutmeg. I did 1/2 tsp almond extract. And I added dried cherries and shredded coconut and a little bit of butter. I'm doing all this because I want it to be like the Aussie bites, so I also thought I would put them in a mini muffin pan. I didn't expect them to rise though. But they did and they are mini muffins and they are DELICIOUS! My 2 year old tried it and came in two more times for more. I like this recipe and I might keep trying to tweek it to get some Aussie bites out of it!

Lemon Slice - No Cooking

Very tasty! Drizzled the top with condensed milk. Will make again and I think I'll try the lime and ginger as was suggested by another reviewer. Might try a tad less butter next time (1/3 c).

Salsa Chicken Skillet

Used what I had on hand. 1 cup salsa, 1 1/2 Tbl tomato paste, 1/2 c. fire roasted tomatoes, 1 tsp cumin. I didn't put in corn, red bell instead of green. No celery or mushrooms, but I did dice up zucchini and carrots and put more garlic in. So much flavor, so many variations you can do with this. So easily able to change it to what you like or what you have. Definitely going into my rotation.

Cinnamon Stove Top Granola

My family loved this! The flavor was great! I added a dried mixed berry and almonds, cashews, and peanuts. It didn't stick together great, so next time I think I'm going to lessen it to 3 cups of oats and keep the same amount of the syrup. Also I'm going to try cooking the syrup a little bit longer...I'll keep you posted. 6.17.09, 3 cups of oats and cooked the syrup longer....delicious! It is definitely sticking together better! Probably could do 4 cups and it still stick together.

Pumpkin Cream Cheese Muffins

Very tasty. Cream cheese mixture was very runny. It was hard to make some type of indent in the pumpkin mixture to get the cream cheese mixture to stay in the middle and essentially it didn't. Tasted great!

I LOVE YOU Too much Chocolate Cake. I've made this multiple times in a very short amount of time. It is so good! and easy too! I use applesauce instead or in combination with the oil too. Very good!

In-a-Pinch Ketchup

Loved this! Didn't have ketchup on hand so I looked this up and I had all those ingredients on hand so I made it. It is awesome. A little sweet, I might cut some of the corn syrup or sugar next time, but not much. I also cut the water in half so I wouldn't have to simmer for as long.

Delicious Ham and Potato Soup

Oh my goodness! This is amazing! I changed it just a bit. I used carrots too and I started by putting the carrots, celery and onion in the pot until the onion was translucent then added the potatoes, ham, and water, and continued as the recipes calls for. Don't forget the cheddar on top!

Delicious! The flavor was great, the consistancy was a little thick so I added more water. I didn't use wine (personal preference). Perfect with ham and bread and brocolli and I also liked with celery. Thanks!

Bacon Water Chestnut Rolls

I didn't find them that amazing. Especially not with the work these things took...holy cow! My brother-in-law said mine were the best he has had, because of the hot sauce I used. I would suggest a tomato based over a vinegar base.

No-Cream Pasta Primavera

Superb! Add and subtract veggies you like. I added marinated artichokes and left out zucchini and squash. But I also added grilled chicken and toasted pine nuts! Delicious! Tons left for tomorrow, can't wait!

Roasted Garlic Tyrokavteri

Lovely!! I roasted my own bell peppers since I was roasting garlic. I didn't use the half and half. I also used closer to 1/3 c. of lemon juice. So very close to the actual recipe. It tasted very good, but we felt it would be great as a warm/hot dip. So we popped it in the oven at 350 for maybe 20-25 minutes. We ate it with parmesan garlic pita chips. So great!!! Thanks!

Cheddary Artichoke Snacks

I made these today and my husband really liked it. I changed it a little bit. I used sourdough bread, because it was what we had. Also I had been roasting things in the morning, so I roasted garlic and red bell peppers. So I took the roasted garlic and mashed it with butter and spread that on the bottom of the toasted sourdough. Then I sliced the artichokes and then the roasted red pepper and last I topped it with mozzarella. I wanted to eat it so badly, but just had oral surgery. I was craving it!!! Next time. So it has been next time (just two days later) and it is sooo good!!! I increased it to 5 stars with the changes I made! Lovely! It has such a sweet and savory thing going on because of the roasted red bell pepper are sweet. So good!

Sweet Potato Casserole I

This is definitely a dessert and not a side dish. Very sweet and sugary. Sweet potatoes are pretty good without all the sugar too.
