Mock Peanut Brittle
Not bad, but I probably won't make this again. I'm not sure where this title came from, but this is nothing like peanut brittle.

Corn Bread Chicken
This is our fave way to make chicken. Tried it tonight with chicken tenders, and believe it or not, it's even better that way. I have found that the coating stays on better if you dredge in flour, then egg wash, then the corn bread/ranch mixture. This is a keeper, for sure.

Chocolate and Almond Biscotti
There were way too many almonds and chocolate chips, and not nearly enough "binder" to hold it together. It was impossible to slice without crumbling, was VERY dry and almost impossible to shape into a loaf...we had to add quite a bit more moisture. / We used Splenda in place of sugar. Perhaps that affected the texture? Not sure...but I can't imagine anyone rating this more than 2 stars!
