About this Cook
I'm an at home mom with 2 beautiful girls and a husband that loves my cooking experiments. We have a near ZOO, with all of the pets. 3 cats, 3 birds, 2 snakes, a gecko and a small reef tank.
My favorite things to cook
Mexican and Italian. I love to grill because it becomes a family affair! Love soups, especially during the cold winter months and salads during the summer.
My favorite family cooking traditions
On Christmas eve, my family meets together and we all bring potluck appetizers. It's a friendly competition and my family always loves MY contributions which ALWAYS comes from this site because they are always great and different. I also make Christmas dinner, fun Halloween stuff and something for the family Thanksgiving potluck.
My cooking triumphs
I am not certain this is a blessing or a curse, but I never measure and often stray from the recipe. My husband will say "THIS is the best (salsa, soup, dip, dinner) ever, can we have it again?" I have to break it to him that I don't remember exactly how I made it. Most of the time it's an improvement, though, so he doesn't complain.
My cooking tragedies
I wasn't allowed to cook growing up, because my mom didn't want the mess. In college my roomate was one of the older children in a family of 13. She had done so much cooking, that it was not fun for her. Once I made tuna chowder out of a recipe book. The recipe served 12 people and I hadn't cut it down. We ate chowder for breakfast, lunch, and dinner, for DAYS!!!

Caramel Pecan Pie
I am still learning the ropes on how long to bake this, but I LOVE THIS PIE!!!! My next door neighbor is a pecan NUT and she said that she's tried pie all the way across America and this is the best she's ever had. I agree.

Slow Cooker Taco Soup
I made this in the middle of the night, and my husband started eating at breakfast time! Whole family loved it, but I threw in a couple of tablespoons of chopped jalapeno, I used salsa instead of tomato sauce and a few dashes of hot pepper sauce. I served with cheese, sour cream and corn chips! YUM!!!

Marinated Grilled Shrimp
Oh wow!!!! I have made this recipe twice and my husband and kids absolutely rave. It's so excellent and I don't change a thing. Thanks Rachel.
